SMOKED OYSTERS AND BACON

Smoked Oysters and Bacon image

This is how I hot smoked some oysters and bacon in a small fish smoker. They were shucked on the half-shell when I bought them so I smoked in the lower part of the shell. The small fish smokers get quite hot and put out smoke quickly, so you'll need to adjust the times quite a bit if using a different kind of smoker.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 4

12 oysters, shucked on half shell
1 tablespoon olive oil
50 g bacon
1/4 cup mesquite wood chips

Steps:

  • Briefly blanch oysters by filling half-shells with water from a boiling kettle and draining after two minutes by turning upside down for a few minutes then lightly patting dry with a paper towel. They might fall out of the shell while doing this so use a clean surface.

  • Prepare fish smoker with the woodchips and smoke oysters for 15 minutes.

Smoky bacon and barbecue sauce perfectly balance the oysters' briny flavor in this easy-to-make recipe from chef Chris Schlesinger. Also try:Grilled Clams with Garlic, White Wine, and Tomatoes; Southeast Asian-Style Grilled Shrimp with Aromatic Herbs

Categories     Food & Cooking     Appetizers

Yield Serves 12 as an appetizer

Number Of Ingredients 6

1/2 cup (1 stick) unsalted butter, softened
1 tablespoon freshly squeezed lemon juice
1 teaspoon minced garlic
24 oysters, shucked and on the 1/2 shell
1/2 cup Chris Schlesinger's Barbecue Sauce, or favorite prepared barbecue sauce
8 strips bacon, cooked and crumbled

Steps:

  • In a small bowl, mix together butter, lemon juice, and garlic; set aside.
  • Preheat a grill: If using a charcoal grill, make a fire in your grill with the coals placed off to one side. When the coals are completely covered in gray ash, hold your hand about 5 inches above the grill grid; count how many seconds you can comfortably leave it there. When you can hold it there for 3 to 4 seconds, you have medium heat and are ready to grill. If you are using a gas grill, heat the grill for 15 minutes with the lid closed. Before beginning to cook, reduce the temperature by turning the knobs to medium-high.
  • Place oysters on grill near, but not directly over, coals. Top each oyster with 1 teaspoon barbecue sauce and 1 teaspoon butter mixture. Cook until oysters start to ruffle around the edges and juice is bubbling, 2 to 3 minutes. Sprinkle oysters with bacon and serve.

Tips:

  • For the best bacon flavor, use a thick-cut bacon and cook it until it is crispy.
  • If you don't have smoked oysters, you can use regular oysters and smoke them yourself. To do this, place the oysters in a smoker and smoke them for 30 minutes, or until they are cooked through.
  • If you don't have garlic butter, you can make your own by mixing together 1/2 cup (1 stick) of softened butter, 1 clove of minced garlic, and 1/4 teaspoon of salt.
  • Serve the garlicky bacon smoked oysters immediately, or store them in the refrigerator for up to 3 days.

Conclusion:

Garlicky bacon smoked oysters are a delicious and easy-to-make appetizer or snack. They are perfect for any occasion, from a casual get-together to a fancy party. The combination of bacon, garlic, and smoked oysters is irresistible, and the creamy garlic butter sauce takes them to the next level. So next time you are looking for a quick and tasty appetizer, give this recipe a try. You won't be disappointed!
