Garlic-Stuffed Pork Roast With Glaze image

For even more flavor after seasoning the roast cover and refrigerate overnight -- for best results use a meat thermometor for this, stuff the roast with as many cloves as desired, I say the more the better! --- NOTE if you prefer lots of glaze, use 1 cup sugar, 2 tablespoons cornstarch, 1/2 cup vinegar, 1/2 cup water and 1/4 cup soy sauce, cook as directed.

Tips:

  • Choose the Right Roast: Select a bone-in pork loin roast or pork shoulder roast for best results. These cuts are flavorful and juicy, and they hold up well to roasting.
  • Prepare the Roast: Trim excess fat from the roast, leaving a thin layer for flavor. Score the roast with a sharp knife, making shallow cuts in the surface. This will help the marinade penetrate the meat.
  • Make the Marinade: Combine olive oil, garlic, rosemary, thyme, salt, and pepper in a bowl. Whisk to blend. Pour the marinade over the roast, turning to coat evenly. Cover and refrigerate for at least 2 hours, or up to overnight.
  • Roast the Pork: Preheat oven to 350°F (175°C). Place the roast in a roasting pan. Add a cup of water or chicken broth to the bottom of the pan to prevent the roast from drying out. Roast the pork for 3-4 hours, or until the internal temperature reaches 145°F (63°C).
  • Let the Roast Rest: Remove the roast from the oven and let it rest for 10-15 minutes before carving. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful roast.

Conclusion:

Garlic Stuffed Roast is a delicious and easy-to-make dish that is perfect for any occasion. The combination of garlic, herbs, and spices creates a flavorful and aromatic roast that is sure to impress your guests. Serve with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad, for a complete and satisfying meal.
