6 chicken leg quarters, skin removed
1 can (8 ounces) tomato sauce
1/2 cup reduced-sodium soy sauce

If you are serving this for a get together I suggest to double the recipe to make 40 wings --- plan ahead the wings have to marinate for 24 hours, frozen thawed wings retain more moisture it is best to use fresh chicken for this --- make certain to have lots of napkins when you serve these!

1 cup soy sauce
8 green onions, chopped
1/3 cup white vinegar
1/4 cup honey, plus
2 tablespoons honey
1/2 teaspoon cayenne (add in more for extra heat)

Make sure that if you don't want to cook the wrappers, you get the ones that can be soaked for a few seconds in water, then made into a wrap and eaten immediately.

2 tablespoons vegetable oil
1 tablespoon garlic, minced
1/2 teaspoon ginger, grated
2 cups napa cabbage (aka Chinese, not regular cabbage)
1/2 cup bean sprouts
1/2 carrot, grated
2 scallions, finely sliced
2 ounces bean thread noodles, blanched and chopped
8 ounces chicken breasts, cooked and shredded
1 tablespoon oyster sauce
1 tablespoon hoisin sauce

10 vietnamese spring roll wrappers
1 egg, beaten
1/2 cup soy sauce
1/4 cup rice vinegar

Steps:

  • Combine all ingredients for the dipping sauce and set aside.
  • Heat oil in skillet or wok over high heat. Add the garlic, ginger, cabbage, carrot, scallions and bean sprouts. Cook for 2 minutes or until the cabbage is just limp.

1 pound chicken livers, gizzards or boneless thigh meat
1/2 cup dark soy sauce or tamari
1/4 cup mirin
2 tablespoons sake or dry sherry
1 tablespoon brown sugar
2 garlic cloves, peeled and smashed
1/2 teaspoon grated fresh ginger
Scallions, thinly sliced, for garnish

Steps:

  • Cut chicken into one-inch pieces and place in a shallow dish.
  • In a small saucepan, combine soy sauce or tamari, mirin, sake or sherry, brown sugar, garlic and ginger. Bring to a simmer and cook for 7 minutes, until thickened. Reserve 2 tablespoons sauce for serving. Pour remaining sauce over chicken, cover, and chill for at least one hour (and up to 4 hours).

1 cup panko breadcrumbs
4 tablespoons garlic salt

F&W's Kay Chun rubs an Asian-spiced butter under chicken skin before roasting to create an incredibly juicy and delicious bird.
5 whole cloves
5 whole star anise
4 tablespoons unsalted butter, at room temperature
Kosher salt
Pepper
1/2 cup low-sodium soy sauce
2 tablespoons distilled white vinegar
One 2-inch piece of ginger, thinly sliced
3 garlic cloves, crushed
1 1/2 tablespoons sugar
One 3 1/2- to 4-pound chicken
2 tablespoons canola oil
1 cup all-purpose flour
1/3 cup plus 1 tablespoon boiling water
Toasted sesame oil, for brushing
Sliced cucumbers, sliced scallions and hoisin sauce, for serving

Steps:

  • 1. Preheat the oven to 450°. Finely grind the cloves and 3 of the star anise pods in a spice grinder and transfer to a small bowl. Mix in the butter and season with salt and pepper. 2. In a small saucepan, combine the soy sauce, vinegar, ginger, garlic, sugar and the remaining 2 star anise pods. Cook over moderate heat, stirring occasionally, until the glaze thickens, about 10 minutes. 3. Place the chicken on a rack set over a baking sheet. Using a lightly floured rolling pin, roll each piece of dough into an 1/8-inch-thick round. 5. Heat a griddle and brush it with sesame oil. Cook the pancakes, turning once, until golden in spots and cooked through, about 2 minutes. Transfer the pancakes to a plate and cover to keep warm. 6. 2 large garlic cloves, minced
1 tablespoon grated peeled fresh gingerroot
1 whole skinless boneless chicken breast (about 3/4 pound), halved
1 tablespoon vegetable oil
Accompaniment: sesame vegetables
For sesame vegetables:
1 tablespoon vegetable oil
1 medium red bell pepper, cut into thin strips
1/4 pound white mushrooms, trimmed and quartered
4 scallions, root ends and dark green parts discarded, cut crosswise into 1 1/2-inch pieces
a pinch dried hot red pepper flakes, or to taste
1 teaspoon Asian sesame oil, or to taste

Steps:

  • Make sesame vegetables:
  • In a heavy skillet heat vegetable oil over moderate heat until hot but not smoking and cook bell pepper, mushrooms, scallions, and red pepper flakes, stirring, until vegetables are golden and cooked through, about 5 minutes. Toss vegetables with sesame oil and salt and pepper to taste.
  • Make chicken:
  • In a small bowl combine soy sauce, Sherry, brown sugar, garlic, gingerroot, and salt and pepper taste and stir until sugar is dissolved. Gently pound chicken between 2 sheets of plastic wrap until about 1/4 inch thick. In a large sealable plastic bag marinate chicken in soy sauce mixture, turning occasionally, 25 minutes.
  • In a heavy skillet heat oil over moderate heat until hot but not smoking. Remove chicken from marinade, letting excess drip off and reserving marinade, and cook until browned and cooked through, 3 to 4 minutes on each side. Transfer chicken to plate and keep warm. Pour reserved marinade through a sieve into skillet and boil until reduced to about 2 tablespoons.
  • Drizzle chicken with sauce and serve with sesame vegetables.
