Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the final dish. Look for jumbo shrimp, asparagus that is bright green and firm, and Arborio rice that is plump and white.
  • Cook the rice properly: Risotto is a delicate dish, and it's important to cook the rice slowly and carefully. Don't overcrowd the pan, and stir the rice frequently to prevent it from sticking.
  • Add the shrimp and asparagus at the right time: The shrimp should be cooked just until pink, and the asparagus should be tender but still crisp. If you add them too early, they will overcook and become tough.
  • Season the risotto to taste: Risotto should be flavorful but not overpowering. Taste the dish as you go and adjust the seasonings accordingly.
