Perfect Pan-Seared Shrimp With Garlic Butter image

from America's Test Kitchen TV show. Their note: The cooking times below are for 21/25 shrimp (that is, the size of the shrimp is such that there are 21 to 25 in 1 pound). If 21/25 shrimp are not available, adjust cooking times slightly. Either a nonstick or traditional skillet will work for this recipe, but a nonstick will simplify cleanup.

Provided by รก-81356

Number Of Ingredients 8

4 teaspoon extra-virgin olive oil
20 large uncooked shrimp, peeled and deveined
6 medium sized cloves garlic, minced
1 1/2 teaspoon sweet smoked paprika
1 tablespoon fresh parsley, chopped
1 tablespoon cilantro, fresh, chopped
1/2 tsp fresh lemon juice
1 pinch table salt

Steps:

  • Heat a large skillet over high heat until very hot. Lightly coat bottom of pan with 1 teaspoon of oil. Heat oil until lightly smoking. Add ten shrimp in a single layer. Cook just until golden and orange, 10 seconds; flip shrimp quickly. Cook 10 seconds more and immediately transfer to a plate. Repeat with remaining shrimp and 1 teaspoon oil. Reduce heat to medium-high and add remaining 2 teaspoons oil. Add garlic and cook until light golden brown, about two minutes. Stir in paprika. Return shrimp to pan. Reduce heat slightly and cook shrimp until done, about 1 minute; fold in parsley, cilantro, lemon juice and salt. Serve shrimp with pan sauce spooned over top; garnish with cilantro.

Tips:

  • Use large shrimp. Smaller shrimp will cook too quickly and become tough.
  • Peel and devein the shrimp. This will help them cook evenly and prevent the veins from becoming tough.
  • Use a hot pan. This will help the shrimp sear quickly and evenly.
  • Don't overcrowd the pan. If you do, the shrimp will not cook evenly.
  • Cook the shrimp for 2-3 minutes per side. This will ensure that they are cooked through but not overcooked.
  • Season the shrimp with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
  • Serve the shrimp immediately. They are best when they are hot and fresh.

Conclusion:

Garlic seared shrimp is a quick and easy dish that is perfect for a weeknight meal. It is also a great appetizer or party food. The shrimp are seared in a hot pan with garlic and butter, which gives them a delicious flavor. Serve the shrimp with your favorite dipping sauce, such as cocktail sauce, tartar sauce, or lemon butter sauce.
