Time 20m

Yield 4

Number Of Ingredients 6

2 summer squash
¼ cup olive oil
3 cloves garlic, minced, or more to taste
1 teaspoon herbes de Provence
salt to taste
ground black pepper to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Trim the ends from the squash, and cut each squash in half lengthwise. Cut the halves in half again crosswise, to make 4 pieces; cut those pieces in half twice more the long way, to make 16 short spears from each squash. Toss the squash with olive oil and garlic in a bowl; place into a shallow baking dish. Sprinkle with salt and black pepper.
  • Roast the squash until the spears and garlic start to brown, 5 to 10 minutes. Check the squash after 5 minutes, and add time in 2- to 3-minute intervals to avoid burning.

Tips:

  • Choose the right type of summer squash: For this recipe, the best types of summer squash to use are zucchini, yellow squash, and pattypan squash. Avoid using larger, more mature summer squash as they tend to be more watery and less flavorful.
  • Slice the squash evenly: This will help them cook evenly in the oven. If you are using a variety of squash, try to cut them into similar-sized pieces so that they all cook at the same rate.
  • Toss the squash with olive oil and seasonings: This will help them roast evenly and develop a delicious flavor. For a simple seasoning, use salt, pepper, and garlic powder. You can also add other herbs and spices, such as thyme, rosemary, or paprika, to taste.
  • Roast the squash at a high temperature: This will help them caramelize and develop a slightly crispy exterior. Aim for a temperature of 425 degrees Fahrenheit (220 degrees Celsius).
  • Roast the squash until tender: Depending on the size and thickness of the squash slices, this could take anywhere from 15 to 25 minutes. Use a fork to check the squash for doneness. It should be tender when pierced.
  • Serve the squash immediately: Roasted summer squash is best enjoyed fresh out of the oven. It can be served as a side dish, appetizer, or even as a main course.

Conclusion:

Roasted summer squash is a delicious and versatile dish that can be enjoyed in many different ways. With its simple ingredients and easy preparation, it's a great option for busy weeknight meals or special occasions. Experiment with different seasonings and toppings to create a variety of flavorful dishes that everyone will enjoy.
