Yield 8

Number Of Ingredients 13

1 (5 pound) boneless rib-eye roast, left at room temperature for 2 hours before cooking
2 tablespoons olive oil
1 tablespoon salt
2 tablespoons ground black pepper (you can grind whole peppercorns in a blender)
8 large garlic cloves, minced
2 tablespoons minced fresh rosemary
½ teaspoon minced fresh rosemary for the sauce
2 (8 ounce) packages baby bella or domestic white mushrooms, sliced
1 cup chicken broth
¾ cup red wine
1 tablespoon Dijon mustard
1 teaspoon cornstarch dissolved in
2 teaspoons water

Steps:

  • Adjust oven rack to center position and heat oven to 250 degrees F.
  • Heat a large (12-inch) skillet over medium-high heat. Rub roast on all sides with oil, salt and pepper. Turn on exhaust fan, add roast to hot skillet and brown on all sides, about 10 minutes total. Transfer roast to a plate. When cool enough to handle, rub garlic and rosemary all over.
  • Meanwhile, pour off all but 2 Tbs. of the beef drippings. Add mushrooms to hot skillet and saute until well browned, about 8 minutes. Mix broth, wine and mustard; add to mushrooms and simmer to blend flavors and reduce slightly, about 3 minutes. Pour mushroom sauce into a bowl; set aside.
  • Set a wire rack over the skillet and set roast on rack. Slow-roast in oven until roast reaches an internal temperature of 135 degrees F for medium-rare and 140 degrees F for medium, 2 1/2 to 3 hours.
  • Transfer roast to a cutting board; remove rack from skillet. Pour off excess fat, if any. Set skillet over medium-high heat; return mushroom sauce to pan heat to a simmer. Add cornstarch and continue to simmer until sauce thickens slightly, about a minute. Carve meat and serve with the sauce.

Horseradish And Garlic Prime Rib image

Provided by Tyler Florence

Categories     main-dish

Time 2h35m

Yield 6 to 8 servings

Number Of Ingredients 18

1 (3-rib) prime rib beef roast, about 6 pounds
5 garlic cloves, smashed, plus 2 heads garlic, halved
1/2 cup grated fresh or prepared horseradish
1/2 cup sea salt
1/4 cup freshly ground black pepper
1/2 cup extra-virgin olive oil
2 carrots, peeled and chopped
2 parsnips
1 red onion, halved
1 tablespoon unsalted butter
Extra-virgin olive oil
2 pounds assorted mushrooms, such as cremini, oyster, shiitake, chanterelle, or white, trimmed and sliced
Leaves from 2 fresh thyme sprigs
Sea salt and freshly ground black pepper
1/2 cup Cabernet Sauvignon
1/4 cup reserved beef broth (drippings from roast) or low-sodium canned broth
1/4 cup heavy cream
1 tablespoon minced fresh chives

Steps:

  • Preheat the oven to 350 degrees F.
  • Lay the beef in a large roasting pan with the bone side down. (The ribs act as a natural roasting rack.) In a small bowl mash together the garlic, horseradish, salt, pepper, and olive oil to make a paste. Massage the paste generously over the entire roast. Scatter the vegetables and halved garlic around the meat and drizzle them with a 2-count of oil. Put the pan in the oven and roast the beef for about 1 1/2 to 2 hours for medium-rare (or approximately 20 minutes per pound). Check the internal temperature of the roast in several places with an instant-read thermometer; it should register 125 degrees F. for medium-rare. Remove the beef to a carving board and let it rest for 20 minutes. The internal temperature of the meat will continue to rise by about 10 degrees. Remove the vegetables and set aside. Pour the pan juices into a fat separator or small bowl and set aside to allow the fat and beef juices to separate. Pour off and discard the fat. You will use the tasty beef juices for the mushrooms.
  • Place a clean skillet over medium heat. Add the butter and a 2-count drizzle of oil. When the butter starts to foam. add the mushrooms and thyme; and season with salt and pepper. Stir everything together for a few minutes. Add the red wine, stirring to scrape up any stuck bits; then cook and stir to evaporate the alcohol. When the wine is almost all gone, add the reserved beef juices. Let the liquid cook down and then take it off the heat. Stir in the cream and chives, and season with salt and pepper.

TYLER FLORENCE'S HORSERADISH AND GARLIC PRIME RIB

Tyler Florence's Horseradish and Garlic Prime Rib image

This recipe uses lots of salt -- which I don't normally use much of. When I prepared it, I didn't add nearly as much salt -- probably a couple of tbsps. If I didn't want to use the juices, I would use the amount of salt Tyler calls for.

GARLIC CRUST PRIME RIB

Garlic Crust Prime Rib image

This recipe adapts very well for use with chuck eye, rolled cross rib or rump roast. It is recommended getting your roast coated in the crust and allowing to sit overnight to absorb some of the wonderful flavors. Just remember that the roast must be removed from the refrigerator at least a few hours before you are planning on roasting it, to warm. Roasting time will vary with size of roast and desired doneness. Roasting times are given in recipe.

Provided by Annacia

Categories     Roast Beef

Time 30m

Yield 10-16 serving(s)

Number Of Ingredients 8

6 -10 lbs prime rib roast (or 2, 3-5 lb roasts)
3/4 cup olive oil
9 garlic cloves, peeled, crushed
3 cups breadcrumbs
3/4 cup chopped fresh parsley or 1/4 cup dried parsley
2 tablespoons chopped fresh basil or 2 teaspoons dried basil
2 teaspoons salt
1 1/2 teaspoons black pepper

Steps:

  • To prepare for crust:
  • Wipe down the roast and place on a roasting rack.
  • Heat your oil in a skillet and add the garlic.
  • Sauté 2 minutes, pressing the juice from the garlic into the oil.
  • Take the pan off of the heat.
  • Mix in bread crumbs, parsley, seasonings, salt and black pepper, allowing to cool slightly, press the mixture onto the roast, coating well.
  • The roast can be sealed tightly and refrigerated at this point
  • When ready to put into oven, preheat oven to 450ºF.
  • Insert meat thermometer into the thickest portion of the muscle.
  • When the oven has reached 450ºF, place the roast in and cook at this temperature for approximately 20 minutes.
  • This will sear the meat, keeping the juices inches
  • Reduce the heat to 325ºF and continue cooking until done to your taste.
  • This type of roast does not need to be basted.
  • Roast at 325ºF until meat thermometer registers 140ºF for rare (16 to 18 minutes per lb.), 160ºF for medium (20 to 22 minutes per lb.) or 170ºF for well done (24 to 26 minute per lb.) *.
  • Remove from the oven and place a sheet of aluminum foil and then several kitchen towels over the roast. It will continue to cook after being removed from the oven, the juices will settle and the texture will be firmer which will allow easier carving.
  • Allow to stand for 15 to 20 minutes before carving.
  • (*Remember if roasting more than one item at a time in a oven that it will always take longer. Figure your appropriate time frame for roasting and estimate additional time depending upon how much food will be in the oven at any one time. It is better to overestimate the amount of time needed than to under estimate. Meat can always be pulled from the oven early if done sooner than you expect and covered with towels as described above. The meat will stay hot and juicy for a long period of time.).

2tablespoons2 tablespoons fresh thyme, finely chopped
2tablespoons2 tablespoons salt
1tablespoon1 tablespoon pepper
11 (5- to 7-pound) boneless ribeye roast, trimmed

Once the 2 hours are up, remove the roast from the pan and pour the pan drippings into a saucepan over medium heat. Add flour, whisking until there are no lumps, then add beef stock, stirring and bringing the sauce to a boil. Remove from heat and strain the sauce into a gravy dish. PRIME RIB - ROSEMARY/GARLIC

PRIME RIB - ROSEMARY/GARLIC image

Categories     Beef     Roast     Dinner

Yield 12 Servings

Number Of Ingredients 17

4 to 5 rib Prime Rib (around 10 pounds).
Roaster Mix:
2 cups rough chopped celery
2 cups baby carrots, cut in half
2 cups mushrooms, quartered
2 cups rough chopped onion
5 or 6 whole garlic cloves
1 cup red wine
1 cup chicken stock
3 bay leaves
salt to taste
Rib rub:
1/2 bunch rosemary, roughly chopped
3 - 5 crushed garlic
1/2 tsp. cayenne pepper
olive oil
kosher salt

Steps:

  • Preheat oven to 450 degrees F. Put roaster mix in large roaster. Place chopped rosemary, crushed garlic and cayenne pepper in food processor. Chop. Add olive oil through tube to make a paste. Rub paste onto prime rib. Generously salt meat with kosher salt. Place roast on roasting rack and place in 450 degree oven. Roast for 30 minutes. Reduce heat to 350 degrees and roast until meat is 120 degrees per meat thermometer (75 to 90 minutes). Remove roast and let sit 20 - 30 minutes before carving. Place roaster vegetables on serving plate and top with sliced prime rib.

Tips:

  • Choose a high-quality prime rib roast: Look for a roast with good marbling, which will help keep it moist and flavorful during cooking.
  • Allow the roast to come to room temperature before cooking: This will help ensure that the roast cooks evenly.
  • Season the roast generously with salt and pepper: You can also add other seasonings, such as garlic powder, onion powder, or dried herbs.
  • Roast the prime rib at a low temperature: This will help prevent the roast from drying out. The ideal internal temperature for medium-rare prime rib is 135 degrees Fahrenheit.
  • Let the roast rest before carving: This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful roast.

Conclusion:

Garlic prime rib is a classic dish that is perfect for a special occasion dinner. By following these tips, you can ensure that your prime rib turns out perfectly cooked and flavorful. Serve the prime rib with your favorite sides, such as mashed potatoes, roasted vegetables, or creamed spinach.
