GARLIC NOODLES

Garlic Noodles image

These deceivingly simple, yet devastatingly delicious garlic noodles were invented back in the '70s at a restaurant in San Francisco called Thanh Long. Usually served with roasted Dungeness crab, the recipe is a very closely guarded family secret, but after lots of investigation, and even more experimentation, I think this is very close.

Yield 2

Number Of Ingredients 12

2 tablespoons soy sauce
1 tablespoon oyster sauce
2 teaspoons Worcestershire sauce
2 teaspoons fish sauce
¼ teaspoon sesame oil
1 pinch cayenne pepper
8 cloves garlic, minced
4 tablespoons unsalted butter
¼ cup finely grated Parmigiano-Reggiano cheese
1 tablespoon chopped green onion, or to taste
6 ounces spaghetti
1 pinch red pepper flakes

Steps:

  • Stir soy sauce, oyster sauce, Worcestershire sauce, fish sauce, sesame oil, and cayenne pepper together in a small bowl for the secret sauce.
  • Place secret sauce near the stove. Place garlic, butter, Parmesan cheese, and green onion in individual bowls within easy reach.
  • Melt butter in a skillet over medium heat. Add garlic; cook and stir just until fragrant, about 1 minute. Quickly stir in the secret sauce and turn off the heat.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet slightly firm to the bite, about 12 minutes.
  • Transfer spaghetti into the sauce using tongs, bringing some of the cooking water with it. Toss until well coated and stir in Parmesan cheese. Splash in more pasta water if noodles are too dry.
  • Plate noodles. Garnish with red pepper flakes and green onions.

GARLIC PARMESAN CHICKEN AND NOODLES

GARLIC PARMESAN CHICKEN AND NOODLES image

This is a super-easy recipe which I have tweaked to be even easier. Rather than buying a whole roasted chicken, I am using chicken breasts, cooked and cubed, and using prepared bread crumbs. Recipe & photo: Midwestliving.com

Time 30m

Number Of Ingredients 9

8 oz extra-wide egg noodles
2 large boneless skinless chicken breasts, cooked and cubed
1 c frozen peas
4 clove garlic, minced
1 3/4 c whole milk or light cream
1/2 c coarse bread crumbs
3/4 c shredded parmesan cheese
2 Tbsp butter, melted
snipped fresh thyme (optional)

Steps:

  • 1. In a Dutch oven, bring 6 cups salted water to boiling; add noodles. Cook 10 minutes or until tender; drain.
  • 2. In a saucepan combine chicken, peas, garlic, and whole milk; heat through. Cover and keep warm.
  • 3. In a small bowl, combine bread crumbs and 1/4 cup of the Parmesan with the melted butter.
  • 4. Stir noodles and remaining Parmesan into hot chicken mixture. Heat and stir until bubbly. Divide among four 16-oz. individual casserole dishes. Top each with bread crumb mixture.
  • 5. Bake in a preheated 450-degree oven for 5 minutes or until top begins to brown. If desired, top with fresh thyme.
  • 6. NOTE: may use panko bread crumbs. Combined with Parmesan, they give a unique texture to the topping.

Tips:

  • For a crispier chicken, use boneless, skinless chicken breasts or thighs and pound them to an even thickness before cooking.
  • To add more flavor to the chicken, marinate it in a mixture of olive oil, lemon juice, garlic, and herbs for at least 30 minutes before cooking.
  • Be sure to cook the chicken over medium heat so that it cooks evenly without burning.
  • To make the sauce, use a good quality Parmesan cheese and freshly grated garlic for the best flavor.
  • If you don't have heavy cream on hand, you can substitute milk or chicken broth.
  • Serve the chicken and noodles with a side of roasted vegetables or a salad for a complete meal.

Conclusion:

This Garlic Parmesan Chicken and Noodles recipe is a quick and easy weeknight meal that is sure to please the whole family. The chicken is tender and juicy, the sauce is creamy and flavorful, and the noodles are cooked to perfection.
