She called in a panic, and this is the sauce I advised. All her party guests raved about it. Some reviewers have stated these wings are as good as or better than Wingstop's. We don't have a Wingstop in our area, so I'll take their word for it! (Note: In response to reviewers' recommendations to decrease the amount of butter, this recipe has been adjusted from 1/2 cup to 1/4 cup of butter. Thanks!)

8 chicken thighs (bone in, skin removed)
olive oil (for browning)
2 tablespoons dry sherry
1 cup chicken stock (see note)
1 teaspoon fresh thyme
4 roasted garlic, cloves
1 cup milk
8 ounces cream cheese, softened
1/2 cup parmesan cheese, grated
salt (optional)
fresh ground black pepper
1 tablespoon fresh parsley, chopped
1 lb egg noodles, cooked according to package directions

Steps:

  • Preheat oven to 350°F.
  • Squeeze roasted garlic from the papery peels and mash well.
  • Heat olive oil in a large, heavy skillet then brown chicken thighs thoroughly over medium-high heat. Work in batches removing each batch to a 13X9 pan in the oven as they finish.
  • Reduce heat to medium. Deglaze pan with sherry.

6 cups chicken broth
2 tablespoons olive oil
1 1/2 pounds chicken breast, skinless, cut into 1-inch cubes
Salt and pepper
2 cups dry vermouth
1 pound fresh spinach, thoroughly washed
1 teaspoon butter, plus 1 tablespoon
1 small yellow onion, diced
2 ribs celery, finely diced
5 cloves minced garlic, plus 2 teaspoons
1 package arborio rice (32 ounces)
1/2 teaspoon saffron threads
1/3 cup grated Parmesan
1/3 cup heavy cream
Chives, for garnish

Steps:

  • Warm the chicken broth over low heat.
  • In a saute pan, add 1 tablespoon olive oil. Season chicken with salt and pepper, and saute in oil over medium heat. When chicken is brown, add a splash of the vermouth. Allow it to evaporate and continue to cook for 5 more minutes. Check for doneness ¿ do not over cook. Remove the chicken from the pan and set aside.
  • Wipe the saute pan clean with a paper towel and add a small amount of olive oil, just to lightly coat the pan. Add the spinach and saute. Season with salt and pepper and cook until the spinach is barely wilted. Remove spinach from pan and set aside.
  • In a Dutch oven, over medium heat, add 1 tablespoon olive oil and 1 teaspoon butter and saute onions and celery. After 2 minutes, add the 5 cloves of minced garlic. Continue to saute until onions are translucent. Add rice and cook, stirring constantly until you hear the rice crackling, about 1 to 2 minutes. Add the saffron and remainder of the vermouth and continue to stir until the vermouth is completely absorbed. Add a ladle of chicken stock and continue to stir until absorbed completely. Continue to add remaining stock, a ladle at a time, stirring until completely absorbed before adding another.
  • Cooking time will be approximately 22 minutes for al dente. After the first 20 minutes of cooking add the cooked chicken and spinach and 2 teaspoons of garlic to the rice. After 22 minutes, stir in the remaining tablespoon of butter, Parmesan and cream. Check seasoning, adding salt and pepper if needed. Remove from heat, transfer to a serving dish and garnish with chives.

7 -10 garlic cloves
3 boneless skinless chicken breasts
1/3 cup white wine
1 cup chicken stock
2 teaspoons parsley
1 tablespoon garlic powder
1/2 cup milk
4 ounces cream cheese, softened
1/2 cup parmesan cheese
pepper, to taste

Steps:

  • Coat garlic gloves with olive oil and wrap tightly in foil, roast in a 450 degree oven for 15-20 minutes or until soft.
  • Remove from foil and mash well.
  • Brown chicken breasts in olive oil, not cooking the chicken through at this point but adding color. Remove when finished and set into a casserole dish.
  • Deglaze the sauce pan with the white wine and let boil. Add chicken stock, parsley and roasted garlic. Allow to simmer.
  • Add milk and cream cheese, stirring until it is incorporated, and then add the parmesan cheese. Whisk until smooth.
  • Add black pepper to taste and salt if needed. (the broth and cheese are salty so you probably won't need any).
  • Pour over the chicken and bake uncovered in a 350 degree oven for 25-35 minutes or until chicken is cooked through.
  • Serve sauce over mashed potatoes or pasta. If it is too thin, return to a saucepan and mix together one tablespoon water and one tablespoon of corn starch and whisk into sauce when simmering.

2 lemons, plus wedges for serving
1 head garlic, cloves smashed and peeled
1/2 cup olive oil, plus more for the grill
1/2 cup packed fresh basil, plus 2 large sprigs
5 large sprigs oregano, halved
8 to 10 sprigs thyme, halved
Kosher salt and freshly ground pepper
5 pounds chicken wings
4 tablespoons unsalted butter, at room temperature
1/4 cup grated parmesan cheese

Steps:

  • Grate the zest of 1 lemon and set aside; juice both lemons. Combine the garlic and olive oil in a large microwave-safe bowl and microwave until the garlic starts sizzling, 1 to 2 minutes; let cool. Add the lemon juice, herb sprigs, 1 teaspoon each salt and pepper, and the chicken wings. Using your hands, rub the wings with the oil mixture; firmly press the wings down, making sure they are covered with some of the herbs and garlic. Cover and refrigerate at least 4 hours or overnight, stirring once or twice.
  • Meanwhile, pulse the butter, basil leaves, lemon zest and 1/2 teaspoon each salt and pepper in a mini food processor until combined. Cover and refrigerate until ready to use.
  • Preheat a grill to medium high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side; on a gas grill, turn off half the burners. Remove the basil butter from the refrigerator. Remove the wings from the marinade. Brush the grill grates with olive oil and place the wings on the cooler side of the grill (indirect heat). Cover the grill and cook, turning the wings once, until almost completely cooked through and the skin is beginning to crisp, about 30 minutes. Move to direct heat and grill, turning often, until the skin is crisp and lightly charred, 10 to 15 more minutes.
  • Transfer the wings to a large bowl. Add the basil butter and toss to coat. Add the parmesan and season with salt and pepper; toss again. Serve with lemon wedges.

1/2 cup unsalted butter
2 cloves garlic, finely chopped
1/2 cup all-purpose flour
2 cups whole milk
2 cups Progresso™ chicken broth (from 32-oz carton)
1 tablespoon Italian seasoning
12 no-boil lasagna noodles
2 cups shredded deli rotisserie chicken
3 cups baby spinach leaves
1 container (15 oz) whole milk ricotta cheese
1 egg, beaten
1 cup shredded mozzarella cheese (4 oz)
3/4 cup water
3 tablespoons Progresso™ Italian-style bread crumbs
1/2 cup shredded Parmesan cheese

Steps:

  • Heat oven to 375°F. Spray 13x9-inch baking dish with cooking spray. Set aside.
  • In 4-quart saucepan, melt butter over medium heat. Add garlic; cook 2 to 3 minutes or until garlic is fragrant. Slowly beat in flour with whisk; cook about 1 minute or until smooth. Beat in milk and broth, 1 cup at a time, beating until thickened after each addition. Remove from heat. Beat in Italian seasoning.
  • Pour 1 cup of the milk mixture into baking dish. Top with 3 lasagna noodles. Sprinkle one-third of the chicken and 1 cup of the spinach on top. In small bowl, stir together ricotta and egg. Spread one-third of the ricotta mixture on top of chicken and spinach.
  • Place 3 lasagna noodles on top of the ricotta, followed by 1 cup of the milk mixture, one-third of the chicken, 1 cup of the spinach and one-third of the ricotta mixture.
  • Repeat with another layer of 3 lasagna noodles, 1 cup milk mixture, remaining chicken and spinach and remaining ricotta. Finish with last 3 lasagna noodles and remaining milk mixture. Sprinkle with mozzarella cheese. Pour the water on top of lasagna; cover pan with foil.
  • Bake 45 minutes. Remove foil; top with bread crumbs and Parmesan cheese. Bake 10 to 15 minutes longer or until topping is bubbly and golden brown. Cool 10 to 15 minutes before cutting.
