Number Of Ingredients 8

Garnishes:
2 cans of canned whole potatoes, drained
1 stick of butter, sliced into tablespoon size (for better melting)
1 teaspoon garlic powder or use chopped garlic
Sprinkling of salt and pepper
crumbled cooked bacon
parsley
rosemary

Steps:

  • Preheat the oven to 325 degrees F. Place a stick of butter in a non-stick baking pan (a 13x9 pan works well). Place the pan on the center rack of the oven until the butter is melted. Remove from the oven and add the garlic powder. Mix well. Add the drained potatoes and roll to grease the potatoes completely with the garlic butter. Sprinkle with salt and pepper. Roast for about 25-30 minutes or until tops are a light golden brown ... then remove from the oven and roll them over so the bottom of the potatoes are now on top. Return the pan to the oven and roast for another 25-30 minutes or until they're golden brown and the outsides are a bit crusty. Remove from the oven and remove the potatoes with a slotted spoon so you don't have much butter on them.

3/4 lb red potatoes
6 unpeeled large garlic cloves, flattened
1 tablespoon olive oil
1/4 teaspoon dried rosemary, crumbled
salt & freshly ground black pepper, to taste

Tips:

  • Utilize a big bowl to mix the potatoes, oil, garlic, herbs, and salt to ensure even coating.
  • Don't overcrowd the baking pan; roast the potatoes in a single layer to promote even cooking.
  • Roast the potatoes at a high temperature (425°F) to achieve crispy exteriors and tender interiors.
  • Flip the potatoes halfway through the roasting process to ensure uniform browning.
  • For added flavor, use a flavorful oil such as olive oil or avocado oil.
