LEMON GARLIC MARINADE FOR CHICKEN

Lemon Garlic Marinade for Chicken image

I'm not sure where I got this recipe but it is very good. I usually throw some chicken breasts in a ziploc bag and add this marinade and then freeze. All I have to do for a quick meal is thaw and toss on the grill. This makes enough marinade for about 1-1.5 pounds of chicken breasts. Cooking time reflects marinating time.

GRILLED SHOULDER LAMB CHOPS WITH GARLIC-ROSEMARY MARINADE

Grilled Shoulder Lamb Chops With Garlic-Rosemary Marinade image

This is my favorite recipe for lamb chops-- few ingredients, simple preparation, great flavor. Shoulder lamb chops are less expensive than other lamb chops, but I think they're just as delicious. Can also be grilled on a gas grill. (from Cook's Illustrated)

Provided by Velouria

Categories     Lamb/Sheep

Time 40m

Yield 4 serving(s)

Number Of Ingredients 6

2 large garlic cloves, pureed (about 1 tablespoon)
1 tablespoon minced fresh rosemary
1 pinch cayenne pepper
2 tablespoons olive oil
4 shoulder lamb chops, about 3/4 inch thick (blade or round bone)
salt & fresh ground pepper

Steps:

  • Mix marinade ingredients in small bowl. Rub both sides of each chop with the paste; let stand at least 30 minutes. (Can be refrigerated overnight.).
  • FOR CHARCOAL GRILL:.
  • Heat enough coals to cover surface area large enough for four chops. Once coals are covered with gray ash, spread them, set grill rack in place, and cover grill with lid in order to heat rack, about 5 minutes. Or heat oven broiler.
  • Sprinkle both sides of each chop with salt and pepper to taste.
  • Position chops over hot coals. Grill until bottom of each chop is well browned, about 2 minutes. (If chops start to flame, pull off heat for a moment or extinguish flames with squirt bottle.) Turn each chop and cook about 2 more minutes for medium-rare or 2 1/2 minutes for medium. If broiling, position chops 2 to 3 inches from heating element and cook about 3 minutes each side for medium-rare and 3 1/2 minutes each side for medium.
  • FOR GAS GRILL:.
  • Turn all burners on grill to high, close lid, and heat until grill is very hot, about 15 minutes. Leave one burner on high and turn other burner(s) down to medium.
  • Rub chops with oil and sprinkle with salt and pepper to taste.
  • Grill chops, covered, over hotter part of grill, turning them once, until well browned, about 4 minutes. Move chops to cooler part of grill and continue grilling, turning once, to desired doneness, about 6 minutes for rare (about 120 degrees on instant-read thermometer), about 8 minutes for medium (about 130 degrees), or about 10 minutes for well-done (140 to 150 degrees).
  • Remove chops from grill and let rest for 5 minutes. Serve immediately.

GRILLED LEG OF LAMB WITH GARLIC AND HERB LEMON MARINADE

Grilled Leg of Lamb With Garlic and Herb Lemon Marinade image

This is really the only recipe I use when I grill a leg of lamb. Plan ahead, the lamb needs to marinate 24 hours or overnight. This marinade can also be used for lamb chops. A butterflied leg of lamb is with the bones removed and cut to spread open, you can ask your butcher to remove the bones and butterfly it for you. If you prefer a more lemony taste then thinly slice half of another lemon, leave the peel on, and just throw the slices inside the bag or bowl with along with the other marinade. If desired you can also stuff the lamb with garlic cloves as well as adding the minced garlic in with the marinade. Grilling time depends on size of lamb. This recipe produces an excellent grilled lamb that melts in your mouth, try to not overcook the lamb, for best results leave slightly pink in the middle.

AMAZING GINGER-GARLIC STEAK MARINADE

Amazing Ginger-Garlic Steak Marinade image

This marinade tenderizes the steaks and makes them absolutely delicious. You won't need steak sauce for this one! I will sometimes use it on a big London broil which I'll slice against the grain. The result is tender and really delicious. I never measure anything for this. It's hard to mess up. Prep time doesn't include time marinating in the fridge.

STEAKS IN GARLIC LIME MARINADE (PALOMILLA)

Steaks in Garlic Lime Marinade (Palomilla) image

Adapted from Steve Raichlen's The Barbecue! Bible. This is a quick, easy marinade that makes an amazing grilled steak. Prep time includes 30 minutes of marinating in the fridge.

LEMON, HERB & GARLIC MARINADE

Lemon, Herb & Garlic Marinade image

I've adapted this from a Jamie Oliver recipe. Jamie makes it with his 'flavour shaker' but as most people probably don't have one - you can use a mortar and pestle. Use this marinade for steak, chicken or fish. It imparts a wonderful flavour. We had it with steak and it made it beautifully moist and tender and lemony - quite a different taste for steak but absolutely delicious! Quantities given should make enough to marinade 2-3 steaks or 2 large chicken breasts or 4 fillets of fish.

CUBAN STEAK WITH GARLIC CITRUS MARINADE AND SALSA RECIPE

Cuban Steak With Garlic Citrus Marinade and Salsa Recipe image

Found this online at cdkitchen.com. Posting for ZWT. This sounds like it would make a wonderful steak!!

Provided by diner524

Categories     Steak

Time 30m

Yield 4 serving(s)

Number Of Ingredients 9

4 (5 -6 ounce) flank steaks
4 garlic cloves, peeled
1/2 cup orange juice
1/4 cup lemon juice
2 tablespoons olive oil
2 large sweet oranges
1/2 red onion, thinly sliced
2 tablespoons finely chopped fresh cilantro
black pepper

Steps:

  • Preheat grill. Meanwhile, prepare the steaks. Trim any excess fat or connective tissue from them. One at a time, place each steak piece between two sheets of waxed paper; pound with a meat pounder until they are flattened to a thickness of about 1/2".
  • Press the garlic cloves through a garlic press and put into a large, shallow dish. Add the orange and lemon juices and the olive oil and stir well. Add the steaks, turning them in the mixture to coat them, and leave them in the dish at room temperature.
  • To prepare the Orange-Onion Salsa: Segment the oranges. Using a sharp knife, first cut off the peel at the top and bottom of each orange, cutting thickly enough to remove the outer membrane of the orange segments as well. Then stand each orange on a cut end and cut off the peel in strips in the same way.
  • Holding the peeled orange over a bowl to catch the juices, free each segment by cutting between it and the membranes on either side; cut the freed segment crosswise in half; let the halves drop into the bowl. Add the sliced onion and cilantro and toss well, seasoning with salt and pepper to taste.
  • Carefully oil the grill rack. Remove the steaks from their marinade, pat them dry, and season them with salt and pepper to taste. Place the steaks on the rack and cook, turning once, until done to your liking, 12-15 minutes total for medium.
  • Serve the steaks, passing around the Orange-Onion Salsa for guests to spoon alongside the meat.

WINE AND GARLIC MARINADE

Wine and Garlic Marinade image

Categories     Portuguese

Time 3h10m

Yield 1 cup

Number Of Ingredients 6

3 -4 garlic cloves
1 tablespoon paprika
1 teaspoon coarse salt (to taste)
6 black peppercorns
1 tablespoon olive oil
1 cup red wine or 1 cup white wine

Steps:

  • Using a mortar and pestle, mash the garlic and add the dry ingredients one at a time, blending well.
  • Drizzle in 1 tbs. of olive oil.
  • Rub meat with spice mixture and place in glass dish.
  • Pour the wine over meat to partially or entirely cover it.
  • Marinate, turning occasionally, for a few hours or overnight in refrigerator.

Tips:

  • Use succulent garlic cloves: Fresh, plump garlic cloves are essential for a flavorful marinade. Avoid using dry or shriveled cloves.
  • Let the marinade work its magic: Allow the meat or vegetables to marinate in the garlic marinade for at least 30 minutes, or up to overnight. The longer the marinating time, the deeper the flavor.
  • Use a variety of marinating liquids: While olive oil is a classic choice for marinades, you can also use other liquids such as citrus juices, vinegar, yogurt, or beer. Experiment with different liquids to create unique flavor profiles.
  • Add herbs and spices: Enhance the flavor of the marinade by adding herbs and spices of your choice. Dried or fresh herbs like thyme, rosemary, oregano, or basil work well. Common spices include paprika, cumin, chili powder, or garlic powder.
  • Sear the meat before grilling or baking: Searing the meat before cooking helps create a flavorful crust and locks in the juices. This step is especially important for steaks, chops, and roasts.
  • Baste the meat while cooking: To keep the meat moist and prevent it from drying out, baste it with the marinade while cooking. This will also add extra flavor and color to the dish.
  • Use the marinade as a sauce: After cooking, you can use the leftover marinade as a sauce for the meat or vegetables. Simply heat the marinade in a saucepan until it thickens slightly.

Conclusion:

A flavorful garlic marinade can transform ordinary ingredients into extraordinary dishes. Whether you're grilling, baking, or roasting, marinating with garlic adds a depth of flavor that will impress your taste buds. Experiment with different marinating liquids, herbs, and spices to create your own unique flavor combinations. With a little creativity, you can elevate your everyday meals to gourmet status.
