5 small bone-in chicken thighs (approximately 2 pounds)
1 pound small red potatoes (halved)
1 pound fresh green beans
1/4 cup olive oil
2 tablespoons fresh lemon juice
2 cloves garlic (minced)
1 1/2 teaspoons kosher salt
1 teaspoon dried basil *
1 teaspoon dried oregano *
1 teaspoon dried thyme *
1 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 400°F. Place the chicken, potatoes, and green beans on a large baking sheet.
  • Stir the olive oil, lemon juice, garlic together with all of the spices. Drizzle the spice mixture over the meat, potatoes, and vegetables. Use your hands to stir the pieces around a bit and make sure everything is well coated. Be sure to leave the chicken skin-side up.

4 chicken breasts (bones left in, with skin, about 3 1/4 pounds)

Steps:

  • Preheat oven to 400°F. Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet. In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the green beans and toss to coat.
