A typical North African dish, made delicious with parsley, mint, basil and lemon! A great side to meat dishes. Adapted from Gourmet magazine(July/2003). Due to some reviews I have updated the recipe, adding more garlic and lemon juice.

Tips:

  • Use high-quality couscous. Look for couscous made from 100% durum wheat semolina, as it has a better texture and flavor than couscous made from other grains.
  • Toast the couscous before cooking. This step helps to bring out the nutty flavor of the couscous and gives it a slightly chewy texture.
  • Use a flavorful broth. The broth you use to cook the couscous will add a lot of flavor to the dish, so choose a broth that you enjoy the taste of. Chicken broth, vegetable broth, or beef broth are all good options.
  • Add vegetables and herbs. Vegetables and herbs add color, flavor, and nutrients to couscous. Some good options include carrots, celery, onions, garlic, tomatoes, zucchini, peppers, and herbs such as parsley, cilantro, and basil.
  • Season the couscous well. Couscous is a blank canvas, so don't be afraid to season it liberally. Salt, pepper, garlic powder, onion powder, and paprika are all good options.

Conclusion:

Garlic herb couscous is a delicious and versatile side dish that can be served with a variety of meals. It is easy to make and can be tailored to your own taste preferences. Whether you like it plain or loaded with vegetables and herbs, garlic herb couscous is sure to be a hit.
