This is a traditional Thanksgiving recipe in our house. It is a healthier alternative to green bean casserole. You can use regular green beans, but they will need to steam for an extra 2-3 minutes.

2 tablespoons olive oil
1 tablespoon smart balance margarine
1 lb French haricots vert, trimmed
6 garlic cloves, thinly sliced
1/2 cup almonds, slivered
1/8 teaspoon sea salt
1/8 teaspoon fresh ground black pepper

Steps:

  • Place the oil and margarine in a skillet over medium-low heat (low heat on a gas range) until melted.
  • Add the haricots verts, stir, and cover for 3 minutes. Add the sliced garlic, stir, and saute for 3 more minutes. Add the remaining ingredients, stir, and saute for the final 3 minutes.

1/4 cup almonds
1 1/2 pounds haricots verts (French string beans), root ends removed
3 tablespoons unsalted butter
1 1/2 tablespoons olive oil
2 shallots, minced
Freshly cracked black pepper
1/2 lemon, zested and juiced

Steps:

  • Bring a large pot of salted water to boil.
  • Meanwhile, in a large saute pan, toast the almonds over medium-high heat until golden brown and fragrant, 3 to 5 minutes. Remove from the pan, finely chop and set aside.
  • Blanch the string beans in salted boiling water until crisp but tender, 2 to 3 minutes. The salt will impart flavor as well as help keep the string beans crisp.
