Steps:
- Roasted Garlic Oil:
- Place oil and garlic in a blender and blend until smooth. Strain.
- Flatbread:
- Mix water and yeast in a large bowl and let stand 5 minutes to proof. Gradually pour in 2 cups of the flour and stir to incorporate. Mix for about 1 minute to form a sponge. Let stand, covered, for at least an hour.
- Put sponge in the bowl of a stand mixer. Using the dough hook, add the salt and oil, then add the flour, 1/2 cup at a time, to form a dough. Remove from bowl and knead. Place in a clean oiled bowl and let rise, slowly, about 2 1/2 hours. Divide dough into 4 balls, if desired, let rise again for 1/2 hour, and then roll out as desired.
- Flatten flatbread dough, gently press into a large rectangle, brush liberally with olive oil, and throw on grill. Grill on both sides until golden brown. Spread 1 side with ricotta, sprinkle with salt and pepper, scatter tomatoes over, drizzle with Roasted Garlic Oil, and garnish with basil and more freshly ground black pepper. Serve immediately.
- Yield: 4 individual flatbreads or 1 large flatbread

Steps:
- Preheat a grill: If using a charcoal grill, make a fire in your grill with the coals placed off to one side. When the coals are completely covered in gray ash, hold your hand about 5 inches above the grill grid; count how many seconds you can comfortably leave it there. When you can hold it there for 2 to 3 seconds, you have medium-high heat and are ready to grill. If you are using a gas grill, heat the grill for 15 minutes with the lid closed. Before beginning to cook, reduce the temperature by turning the knobs to medium-high.
- Place a large heatproof pan on grill near, but not over, the hottest side of the grill. Add butter and garlic and cook until butter is melted, about 3 minutes. Add tomatoes and white wine.
- Place clams directly over fire on grill and cook until opened, transferring clams to pan as they open. Season clams with salt and pepper; sprinkle with parsley. Serve immediately with grilled bread.

Steps:
- Cut the tomatoes in half crosswise.
- Season with salt and pepper.
- Peel and crush the garlic.
- Heat the oil in a small frying pan over medium heat.
- Add the garlic and cook until just starting to turn golden brown (1 to 2 minutes).
- Pour garlic and oil into a heatproof bowl.
- Set up the grill and preheat to high.
- When grill is ready, brush some oil on the grill grate.
- Place tomatoes cut side down on the hot grate and grill until nicely browned (3-5 minutes).
- Rotate 45 degrees after 2 minutes to create the crosshatch marks on tomatoes.
- Turn the tomatoes with tongs so they sit with the cut side facing up.
- Spoon the fried garlic into the tomatoes.
- Grill until the bottoms are nicely browned (3-5 minutes).
- Transfer to a serving plate, grate the cheese over the tomatoes, and sprinkle with thyme.
- Serve immediately.
Tips:
- Choose ripe and firm tomatoes: Ripe tomatoes will have a deep, even color and will yield slightly to pressure. Avoid tomatoes that are bruised or have soft spots.
- Use a variety of tomatoes: Different types of tomatoes have different flavors and textures. Try using a mix of cherry tomatoes, Roma tomatoes, and heirloom tomatoes to create a flavorful and colorful dish.
- Marinate the tomatoes before grilling: Marinating the tomatoes in a mixture of olive oil, garlic, herbs, and spices will help them to absorb flavor and stay moist during grilling.
- Grill the tomatoes over medium-high heat: This will help to prevent them from burning. Cook the tomatoes for 5-7 minutes per side, or until they are slightly charred and tender.
- Serve the tomatoes immediately: Grilled tomatoes are best served immediately, while they are still warm and juicy.
Conclusion:
Garlic grilled tomatoes are a delicious and easy-to-make side dish that can be enjoyed as part of a meal or as a snack. They are packed with flavor and nutrients, and they can be made with a variety of different types of tomatoes. Whether you are looking for a quick and easy weeknight meal or a flavorful addition to your next party, garlic grilled tomatoes are a great option.
