8 chicken thighs
Kosher salt and freshly ground black pepper
1 head garlic, separated into whole cloves, papery skin removed (about 20 cloves)
3 tablespoons olive oil
1 tablespoon butter
2 teaspoons herbes de Provence
1 teaspoon flour
1/4 cup chicken stock
1/2 lemon, juiced
Bread, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Rinse and pat dry the chicken. Salt and pepper liberally and allow to temper on a cutting board while you prepare the garlic. In a large ovenproof saute pan over medium heat, cook the whole garlic cloves in olive oil and butter, stirring occasionally, until lightly golden, about 10 minutes. Remove the garlic from the pan and set aside. Increase the heat to medium high and brown the chicken skin-side down until the skin is golden and crispy, about 5 minutes. Turn the chicken over, sprinkle on herbes de Provence. Add the garlic back to the pan and place hot pan in oven. Bake the chicken until cooked through, about 25 minutes. Once the chicken is done, remove chicken thighs and garlic to a platter. Place the pan over medium-high heat and sprinkle the drippings with flour and stir to incorporate. Deglaze the pan with the stock and lemon juice. Pour the sauce over the chicken on the platter and serve with bread for sauce-mopping and garlic-spreading.

1 roasting chicken (5 to 6 pounds)
1 small onion, quartered
40 garlic cloves, peeled
1/4 cup canola oil
1-1/2 teaspoons salt
1 teaspoon dried parsley flakes
1/2 teaspoon dried celery flakes
1/2 teaspoon each dried tarragon, thyme and rosemary, crushed
1/4 teaspoon pepper

Steps:

  • Place chicken breast side up on a rack in a shallow roasting pan. Stuff onion in chicken; tie drumsticks together. Arrange garlic cloves around chicken. 1 large whole chicken (about 7 1/2 pounds)
1/4 cup (1/2 stick) unsalted butter, softened
2 tablespoons coarse salt
1/2 teaspoon freshly ground pepper
1 garlic bulb, halved horizontally
60 garlic cloves (do not peel)

Steps:

  • Preheat oven to 425 degrees. Let chicken stand at room temperature 30 minutes. Remove giblets and excess fat from cavity. Rinse chicken; pat dry. Brush outside with butter, and season with salt and pepper. Place garlic bulb in cavity. Transfer chicken to a roasting pan. Tuck wing tips under; tie legs with kitchen twine.
  • Roast chicken, basting occasionally with pan juices, 20 minutes. Remove from oven, and arrange garlic cloves around chicken. Continue roasting until skin is deep golden brown and an instant-read thermometer inserted into thickest part of the thigh (avoiding bone) registers 165 degrees, about 1 hour.
  • Transfer chicken and garlic cloves to a platter. Let tand 15 minutes, then remove garlic bulb from cavity, and discard. Carve chicken, and serve.

1 whole roasting chicken, cut into pieces
3 whole heads of garlic
1 tablespoon butter
2 tablespoons olive oil
1 1/2 cups dry white wine
3 tablespoons cognac
2 tablespoons heavy cream
2 tablespoons flour
1 tablespoon fresh thyme leave
1 tablespoon salt
1 tablespoon pepper

Steps:

  • Boil garlic cloves for 60 seconds. Drain & peel.
  • Season chicken liberally with salt and pepper.
  • Heat butter and olive oil in large pan over med-high heat.
  • Saute chicken skin side down first until brown, about 4 minute Turn over with tongs (do not pierce skin) and brown on other side, another 4-5 minute.
  • When chicken is brown, transfer to plate.
  • Add garlic cloves to pan and saute 5-10 minute until evenly browned.
  • Add wine and 2 tbs. cognac, bring to a simmer and scrape bottom of pan.
  • Return chicken to pan and spirinkle with thyme.
  • Cover and simmer about 30 minute or until chicken is cooked through.
  • Remove chicken to platter and keep warm.
  • In a small bowl, whisk together flour and 1/2 cup sauce from pan then whisk it back into pan.
  • Add cream and last tbs. of cognac. Cook 3 minute and add Salt and pepper to taste.
  • Pour sauce and garlic over chicken and serve hot.

1 cup dry white wine
1 cup chicken broth
