Time 50m

Yield 6 to 8 servings

Number Of Ingredients 7

4 to 6 pounds Yukon gold potatoes, peeled
Kosher salt and freshly ground black pepper
1 cup heavy cream
1/2 stick (1/4 cup) unsalted butter
4 cloves garlic, lightly crushed
3 sprigs fresh thyme
2 tablespoons chopped chives

Steps:

  • Put the cut potatoes into a large pot, cover them with cold water, and add a large pinch of salt. Bring to a boil and simmer until the potatoes are fork tender, about 20 to 30 minutes. Drain well. Meanwhile, in a small pot heat the cream, butter, garlic, and thyme. While the potatoes are still warm, press them through a potato ricer or food mill into a bowl. Stir in the warm cream a bit at a time, straining out the solids, until the potatoes are fluffy. Season with salt and pepper and gently fold in the chives. Serve immediately.

WORCESTERSHIRE BUTTER

Worcestershire Butter image

This easy compound butter brings the brawny flavors of Worcestershire sauce, thyme and garlic to just about anything. Use it on steak, chicken, grilled corn on the cob or French bread - whatever you think would benefit from its intensity. Make sure to let it soften a bit before serving. Once it's soft and spreadable, you may just want to slather it on with abandon.

Time 10m

Yield 1/2 cup

Number Of Ingredients 8

1/2 cup unsalted butter (1 stick), softened
1 tablespoon chopped fresh thyme
1 tablespoon minced chives
2 teaspoons Worcestershire sauce
1 garlic clove, grated or mashed to a paste
Finely grated zest of 1 lemon
1/4 teaspoon fine sea salt, plus more to taste
1/2 teaspoon freshly ground black pepper

Steps:

  • In a bowl, mash together the butter, thyme, chives, Worcestershire sauce, garlic, lemon zest, salt and pepper.
  • Spoon the butter onto a piece of parchment paper or plastic wrap, form into a log and wrap well. Chill for at least 2 hours before using.

Tips:

  • Use fresh garlic chives. Fresh garlic chives have a more intense flavor than dried chives, and they will give your butter a more vibrant green color.
  • Chop the garlic chives finely. This will help them distribute evenly throughout the butter.
  • Use unsalted butter. This will allow you to control the amount of salt in the butter.
  • Soften the butter to room temperature before whipping it. This will make it easier to whip and will help the garlic chives incorporate more easily.
  • Whip the butter until it is light and fluffy. This will help to incorporate air into the butter, making it spreadable and flavorful.
  • Season the butter to taste with salt and pepper. You can also add other herbs or spices, such as lemon zest, dill, or paprika.
  • Store the butter in an airtight container in the refrigerator for up to 2 weeks.

Conclusion:

Garlic chive whipped butter is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It is perfect for spreading on bread, crackers, or vegetables, or using as a marinade for chicken, fish, or steak. It is also a great addition to compound butter recipes. With its bright green color and garlicky flavor, garlic chive whipped butter is sure to be a hit at your next gathering.
