24 cubes part-skim mozzarella cheese (3/4 inch each, about 10 ounces)
3 tablespoons butter, melted
2 teaspoons minced fresh parsley
1 garlic clove, minced
1/2 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
2 tablespoons grated Parmigiano-Reggiano cheese

Steps:

  • Divide dough into 24 portions. Shape each portion around a cheese cube to cover completely; pinch to seal. Place each roll in a greased muffin cup, seam side down. Cover with kitchen towels; let rise in a warm place until doubled, about 30 minutes. Preheat oven to 350°., In a small bowl, mix butter, parsley, garlic, Italian seasoning and pepper flakes. ½ cup milk
1 tablespoon butter or margarine, softened
1 egg white
1 tablespoon grated Parmesan cheese

Steps:

  • Combine 1-1/2 cups flour, undissolved yeast, sugar, salt and garlic powder in a large mixer bowl. Heat water, milk and butter until very warm (120 degrees F to 130 degrees F). Add to dry ingredients and beat for 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Stir in enough additional flour to make a soft dough.
  • Cover and let dough rest 10 minutes in bowl.

1 lb sharp cheddar cheese
1 lb medium cheddar
16 ounces cream cheese
1 cup grated pecans (chopped fine)
3 garlic cloves, chopped fine
paprika

Steps:

  • Grate Sharp Cheddar and Medium Cheddar cheese. Add cream cheese. Let it set at room temperature for 4 hours. Mix all ingredients. Shape into rolls ( i call them logs) about 6 or 8 inches long and about as wide as an egg i would say. This recipe will make about 6 logs. Roll them into the paprika until they are well dusted. Wrap them in foil and place in fridge overnight. They will keep for 4 weeks in fridge. After chilling, slice and serve them with crackers.
  • Note* Aside from the 4 hours you have to set it out, it take about an hour to do the rest, but is well worth it!

3/4 cup water
1 teaspoon salt
1 tablespoon butter or 1 tablespoon margarine
2 tablespoons sugar
2 cups all-purpose flour
1 tablespoon nonfat dry milk powder
1 1/2 teaspoons red star brand active dry yeast
1/4 cup melted butter or 1/4 cup margarine
1 -2 garlic clove, Crushed
2 tablespoons freshly grated parmesan cheese

Steps:

  • Place Dough ingredients in bread pan, select Dough setting, and press Start.
  • When dough has risen long enough, the machine will beep. Turn off bread machine, remove bread pan, and turn out dough onto a lightly floured counter top or cutting board. Gently roll and stretch dough into a 24- inch rope.
  • For small dinner rolls grease 2 8-inch cake pans. With a sharp knife, divide dough into 16 pieces. (Hint: First cut dough into 8 equal pieces, and then cut those in half.
  • For Sandwich buns. Grease 1 8-inch pan. With a sharp knife cut into 6 pieces.
  • Shape each piece into a ball and place in a prepared cake pan. In a small bowl, combine butter, garlic and cheese; pour over rolls.
  • Cover and let rise in a warm oven 30-45 minutes until doubled in size. (Hint: To warm oven slightly, turn oven on Warm setting for 1 minute, then turn off, and place covered dough in oven to rise. Remove pan from oven before preheating.).
