These muffins have a very fluffy texture and a rich garlicky taste. They are greta served on a brunch buffet or as a snack. I like them spread with additional cream cheese or just plain, but you can use them in which ever way you like. Feel free to add or leave out ingredients to adjust them to your likings.

Number Of Ingredients 10

280 g flour (2 1/4 cups)
3 teaspoons baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
2 teaspoons fresh ground black pepper (or more if you like)
2 large eggs
200 g plain yogurt (7oz)
6 tablespoons oil (I use sunflower)
150 g cream cheese with garlic and herbs (2/3 cup)
1 garlic clove, minced (more if you like)

Steps:

  • Combine flour, baking powder, baking soda, salt and black pepper in a bowl. Make a well in the centre.
  • In a second bowl combine eggs, oil, yoghurt, minced garlic and cream cheese. Pour into the well and stir until just combined (do not overmix).
  • Fill dough into prepared muffin tins (well greased or paper-lined) and bake in the preheated oven at 200°C/400°F for 20 minutes or until well risen and golden bown.

Number Of Ingredients 15

1 1/2 c all purpose flour
1 1/2 tsp sugar
1 Tbsp baking powder
1/2 tsp morton nature's season or salt
1/2 tsp garlic powder
12 oz grated cheese (3 cups)
1 c milk
1 large egg
1/4 c butter at room temperature
BUTTER TOPPING
1/4 c melted butter
1 tsp garlic powder
1/4 tsp morton nature's season or salt
1/4 tsp onion powder
1/4 tsp dried parsley crushed between hands

Steps:

  • 1. Preheat oven to 350. Prepare pan by greasing or buttering muffin pan or using cupcake liners.
  • 2. Muffins: Whisk dry ingredients. Then stir in cheese. In a second bowl whisk egg and milk and add to dry ingredients and then stir in melted butter.
  • 3. Bake at 350 for 20-30 minutes.
  • 4. While muffins are bakingm combine butter topping ingredients. Brush muffins with the butter topping as soon as they come out of the oven.
  • 5. Notes: I use Mortons Natures seasoning instead of plain salt cause it adds more flavor but salt is just fine.
