6 ounces garlic flavored processed cheese, cubed
1 pinch cayenne pepper
2 tablespoons butter
2 tablespoons olive oil
2 cloves garlic, minced
1 tomato, diced
2 pounds fresh shrimp, peeled and deveined
½ lemon, juiced
salt to taste

Steps:

  • Cook grits according to package directions. Stir in cubed cheese and cayenne pepper. Keep warm over low heat.
  • Heat butter and oil in a large skillet over medium-high heat. Saute garlic and tomato until tomato begins to soften. Stir in shrimp and lemon juice. Saute until shrimp are pink. Season with salt to taste.

My very favorite comfort food! Discovered this several years ago on the back of the grits box and I knew I would love it. Nobody eats it except me, so I either pig out or have many leftovers.

4 c water
1 1/4 tsp salt
1 c uncooked quick-cooking grits
8 oz extra sharp cheddar cheese, shredded and separated
1 Tbsp butter
3/4 c milk
2 clove garlic, minced
2 large eggs
cooking spray, butter flavor

Steps:

  • 1. Bring water and salt to a boil in a medium saucepan. Gradually add grits, stirring constantly. Cover and simmer 8 minutes or until thick, stirring frequently.
  • 2. Remove pan from heat. Add the butter and 6 oz. of the cheese, stirring until cheese melts. Combine milk, garlic and eggs, stirring with a whisk. Stir milk mixture into grits mixture. Pour into a greased or sprayed 2-qt. casserole dish.
  • 3. Bake in a preheated 350-degree oven, covered, for 45-50 minutes. Uncover and sprinkle remaining cheese on top; bake an additional 10 minutes, or until cheese is melted and golden brown.

1 cup old fashioned grits (not quick cooking)
3 1/2 cups water
4 tablespoons unsalted butter
3 cloves garlic, minced
8 ounces cream cheese, softened (may use low-fat, but not fat-free)
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 cup heavy cream
1/2 teaspoon Tabasco sauce (or more, depending on taste)
2 eggs, lightly beaten

Steps:

  • Preheat oven to 350°F.
  • Cook the grits in the 3 1/2 cups water for about 15 minutes, or until done, stirring frequently (adjust water amount if needed).
  • Mix in butter, garlic, and cream cheese, stirring until blended and butter melts.
  • Allow to cool a little bit.

5 cups cold water

2 cups regular grits

8 ounces crumbled blue cheese
1 large dashes Tabasco sauce

1/4 cup heavy cream

Steps:

  • Preheat oven to 400°F.
  • Brush garlic with olive oil and sprinkle with salt and pepper. Roast on a baking sheet for 15-20 minutes, until soft and caramelized. Set aside to cool.
  • Pour water into a heavy saucepan over medium heat; add salt. Slowly stir in grits, adding in a steady stream.
  • Bring to a boil and cook, stirring, for about 10 minutes, or until thick and smooth with a soupy consistency. Add more water if necessary.
  • Squeeze garlic into grits. Add Tabasco, butter and cheese, keeping aside a large handful of cheese to garnish.
