- 1. Bring water and salt to a boil in a medium saucepan. Gradually add grits, stirring constantly. Cover and simmer 8 minutes or until thick, stirring frequently.
- 2. Remove pan from heat. Add the butter and 6 oz. of the cheese, stirring until cheese melts. Combine milk, garlic and eggs, stirring with a whisk. Stir milk mixture into grits mixture. Pour into a greased or sprayed 2-qt. casserole dish.
- 3. Bake in a preheated 350-degree oven, covered, for 45-50 minutes. Uncover and sprinkle remaining cheese on top; bake an additional 10 minutes, or until cheese is melted and golden brown.

- Cook the grits in the 3 1/2 cups water for about 15 minutes, or until done, stirring frequently (adjust water amount if needed).
