BROCCOLI RABE PASTA WITH GOLDEN GARLIC

Broccoli Rabe Pasta with Golden Garlic image

Provided by Kemp Minifie

Categories     Garlic     Pasta     Broccoli Rabe

Yield Makes 3 to 4 servings

Number Of Ingredients 6

1 large head of garlic, separated into cloves
1/3 cup extra-virgin olive oil, plus additional for drizzling
1/4 teaspoon crushed red pepper
8 ounces corkscrew or gemelli pasta
1 pound broccoli rabe, lower coarse stems discarded and remainder cut crosswise into 2-inch strips
Accompaniment: grated Parmigiano-Reggiano

Steps:

  • Bring a 6- to 8-quart pasta pot of water to a rolling boil and season generously with salt.
  • Meanwhile, peel the garlic cloves, leaving them whole, then cut them lengthwise into thin slices. Cook the garlic slices in the olive oil in a heavy skillet over medium heat, stirring occasionally, until the oil bubbles, then reduce the heat to medium-low and cook the garlic slowly, stirring occasionally, until pale golden, 5 to 6 minutes. Stir in the red pepper and remove the pan from the heat (the garlic will continue to cook in the residual heat).
  • Add the pasta to the boiling salted water and cook it, stirring once or twice in the beginning, according to the package instructions. About 4 to 5 minutes before the pasta is done (depending on how tender your broccoli rabe is), stir in the broccoli rabe and continue to boil the mixture, uncovered, until the pasta is al dente and the broccoli rabe is tender.
  • Drain the pasta mixture in a colander and transfer it to a large serving bowl. Spoon the garlic/oil mixture over the pasta and drizzle it with additional olive oil to taste.

PASTA WITH BROCCOLI, ANCHOVIES, AND GARLIC RECIPE

PASTA WITH BROCCOLI, ANCHOVIES, AND GARLIC RECIPE image

Categories     Pasta

Yield 4 Servings

Number Of Ingredients 17

1
pound of
Pasta (ziti, rigatoni, fusilli, or shells)
1/4
cup of
Olive oil
4
slices of
Cloves garlic, peeled and thinly diced
2
tablespoons of
Anchovy paste
4
cups of
Cooked broccoli florets (removed from large stalks)
Freshly ground black pepper to taste
1/2 C Parmesan cheese, grated, plus more for serving

Steps:

  • 1. Bring a large amount of salted water to a boil. Cook the pasta until tender, about 7 to 10 minutes. Drain well. 2. In a large sauté pan, heat the olive oil over moderate heat. Add the garlic and cook until softened, 3 to 5 minutes. Stir in the anchovy paste and mix well. Combine with the cooked broccoli, stirring gently to coat. 3. In a large mixing bowl, toss together the broccoli mixture with the cooked pasta. Season with a generous amount of black pepper. Serve at once.

Tips:

  • Use fresh broccoli: Fresh broccoli florets will give your pasta a vibrant green color and a crisp-tender texture. Avoid using frozen broccoli, as it can become mushy when cooked.
  • Don't overcrowd the pan: When cooking the broccoli, be sure to give it enough space in the pan so that it can cook evenly. If you overcrowd the pan, the broccoli will steam instead of roasting and will become limp.
  • Cook the pasta al dente: Al dente pasta is cooked until it is still slightly firm to the bite. This will help it to hold its shape and prevent it from becoming mushy when you add it to the sauce.
  • Use a flavorful cheese: The cheese that you use in the sauce will make a big difference in the overall flavor of the dish. Use a cheese that has a strong flavor, such as Parmesan, Pecorino Romano, or Asiago.
  • Add some red pepper flakes: A pinch of red pepper flakes will add a subtle heat to the sauce. If you like your food spicy, you can add more red pepper flakes to taste.

Conclusion:

This garlic broccoli pasta is a quick and easy weeknight meal that is packed with flavor. The roasted broccoli is tender and flavorful, the sauce is creamy and cheesy, and the pasta is cooked perfectly al dente. This dish is sure to please everyone at the table, and it is a great way to get your kids to eat their vegetables.
