Something I whipped up from a combination of recipes -- really hearty and filling. Great for canned or fresh tomatoes, especially during the summer season!

32 ounces tomato juice
1 cup chicken broth
14 1/2 ounces petite diced tomatoes
1 cup heavy whipping cream
2 1/2 tablespoons dried basil leaves
3 tablespoons minced garlic
1 tablespoon vegetable oil
1/4 cup sweet unsalted butter
9 -10 ounces cheese tortellini

Steps:

  • Sauté minced garlic in vegetable oil until slightly browned and fragrant.
  • Combine garlic with tomato juice, chicken broth, and petite diced tomatoes in a sauce pan and bring to a boil. Let simmer for 15-20 minutes.
  • Add cheese tortellini and basil leaves, then simmer for 5-10 minutes.

2 garlic cloves, minced
1 teaspoon butter
2 cans (14-1/2 ounces each) reduced-sodium chicken broth or vegetable broth
1/2 cup water
1/3 cup minced fresh basil
1/4 teaspoon pepper
2-1/2 cups frozen cheese tortellini
1 can (19 ounces) cannellini beans, rinsed and drained
2 tablespoons balsamic vinegar
1/4 cup shredded Parmesan cheese

Steps:

  • In a large saucepan, saute garlic in butter until tender. Stir in the broth, water, basil and pepper. Bring to a boil. Stir in tortellini. Reduce heat; simmer, uncovered, for about 3 minutes or until tortellini begins to float. Stir in beans and vinegar; heat through. Sprinkle with Parmesan cheese.
