ABSOLUTELY DELICIOUS AND SIMPLE TOMATO, BASIL, AND GARLIC PASTA

Absolutely Delicious and Simple Tomato, Basil, and Garlic Pasta image

from Giada De Laurentiis. Really simple, but absolutely delicious. You can use canned crushed tomatoes and dried basil, but everybody always knows that fresh ingredients taste best.

Provided by guamswhitest

Categories     One Dish Meal

Time 23m

Yield 4 serving(s)

Number Of Ingredients 10

8 ounces spaghettini (angel hair pasta, macaroni, rotini, whatever pasta you like)
4 scallions, coarsely chopped (white and pale green parts only)
3 garlic cloves, crushed
1 (12 ounce) container cherry tomatoes, halved
2 tablespoons parmesan cheese, coarsely chopped
8 -10 fresh basil leaves
salt & freshly ground black pepper
3 tablespoons olive oil
4 ounces fresh mozzarella cheese, cut into 1/2-inch cubes
salt & freshly ground black pepper

Steps:

  • Cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, stirring often, about 8 minutes.
  • Meanwhile, combine the next 7 ingredients in a food processor. Pulse just until the tomatoes are coarsely chopped (do not puree).
  • Drain the pasta, reserving some of the pasta water. Toss the pasta with the tomato mixture and fresh mozzarella in a large bowl. Add some of the reserved pasta water (about 1/4 cup) if the sauce looks dry. Serve immediately.

Tips:

  • Choose ripe, flavorful tomatoes: Use fresh, ripe tomatoes for the best flavor. Look for tomatoes that are evenly colored and free of blemishes.
  • Roast the tomatoes: Roasting the tomatoes intensifies their flavor and sweetness. You can roast them whole or cut them into halves or quarters.
  • Use fresh herbs: Fresh basil and garlic add a burst of flavor to this dish. If you don't have fresh herbs, you can use dried herbs, but use less since they are more concentrated.
  • Don't overcrowd the pan: When roasting the tomatoes, make sure they are arranged in a single layer in the pan. Overcrowding the pan will prevent the tomatoes from roasting evenly.
  • Add the mozzarella cheese at the end: Add the mozzarella cheese to the tomatoes towards the end of cooking so that it melts but doesn't overcook.

Conclusion:

This garlic basil tomatoes with mozzarella recipe is a delicious and easy appetizer or side dish. It's perfect for summer when tomatoes are at their peak. The roasted tomatoes are bursting with flavor and the fresh herbs add a touch of brightness. The mozzarella cheese adds a creamy richness that brings the dish together. This dish is sure to be a hit at your next party or gathering.
