- Cut up sweet potatoes into wedges,rounds or thin strips.
- In a large bowl add the fries. Coat them with oil. You may substitute just water if desired. Then add the garlic granules,parmesan and sea salt.

- Potatoes -- Two important things to note when making these. First. Cut all the fries approximately the same size. Second, make sure to cook directly on the cookie sheet. No foil or parchment paper. After cutting the sweet potatoes fries add to a medium size bowl with the olive oil and seasoning and toss well to combine. Add to the cookie sheet and make sure then are not laying on top of one another. They need some space so they can brown up.
- Bake -- In a 425 degree oven bake them for 15 minutes and then flip. Guys, they will be soft, they aren't done but be careful flipping them. Bake another 20 minutes until crispy.
- Dip -- As the fries bake, make the dip. Just mix it all in a small bowl and refrigerate. Nothing more. Grating the onion is important as it gives you a lot more flavor. Just enjoy, these are a great change from the average french fries.

- 1. Wash large potato then set aside to dry
- 2. Preheat oven 400 degrees 15 minutes
- 3. wrap each potato in aluminum foil
- 4. Place potato in oven-Bake at 375 degrees for 2 hrs.
- 5. Remove from oven when soft
- 6. Cool 10 minutes then scoop out softened potato leaving 1/8 skin for baking crisp
- 7. Place on pan with sides touching to insure baking into the shape of a bowl
- 8. Bake for 1 hr. on low 250 degrees be careful not to burn
- 9. Remove from pan then place on rack for additional 20-35 minute bake on 200 degrees until golden brown
- 10. While boats are crisping mash potato mixture with fork add 1 Tbls. mayonnaise
- 11. chop fresh chives with very small scallion slices set aside for topping
- 12. Microwave whole garlic according to size between 8-12 seconds. Careful not to cook into a mash as you want this garlic for slicing small
- 13. peel away skin of garlic then run cold water to cool immediately to stop the cooking process

- 15. place garlic slices & 1/2 of the thin sliced scallion on pan with space in between

Let garlic and tatoes cool for about 10 minutes. Once cool enough to handle, cut a thin slice off the top of each potato and discard. Scoop out the pulp until just a thin shell remains. Place the pulp in a large mixing bowl, add the softened butter and mash. Cut the top off the garlic head, leaving the root intact, and squeeze the softened garlic into the bowl with the tatoes, add the milk, buttermilk, rosemary, salt, and pepper and mix well. Spoon the potato mix back into the shells and place back on the baking sheet. Bake at 425 for 20-25 minutes or until heated through. Remove from oven and add a dash of paprika to each top.
