Steps:
- Preheat oven to 450 degrees F.
- Sort potatoes. Potatoes that are 2 inches or less in diameter can be left whole. Halve remaining potatoes. Coat very lightly with a drizzle of extra virgin olive oil and roast potatoes 20 to 25 minutes, until just tender. Transfer potatoes from the oven to a bowl. Sprinkle in parsley and season the potatoes with salt and pepper. Toss the potatoes with butter and paprika to coat evenly. Adjust salt and pepper, to your taste, and serve.
Tips:
- Choose the right potatoes: For this recipe, firm and waxy potatoes like Yukon Gold or Red Bliss are recommended. These varieties hold their shape well and won't become mushy when cooked.
- Cut the potatoes evenly: Cutting the potatoes into uniform pieces ensures they cook evenly. Aim for 1-inch pieces for a crispy exterior and tender interior.
- Don't overcrowd the pan: When pan-frying the potatoes, avoid overcrowding the pan. This will prevent them from cooking evenly and becoming soggy.
- Use a non-stick skillet: A non-stick skillet is ideal for frying the potatoes to prevent them from sticking and breaking.
- Season the potatoes: Don't forget to season the potatoes generously with salt and pepper before cooking. This will enhance their flavor.
- Add the garlic and parsley at the end: Adding the garlic and parsley towards the end of cooking preserves their delicate flavors and prevents them from burning.
Conclusion:
This garlic and parsley potatoes with red and black pepper recipe is a simple yet flavorful side dish that complements various main courses. The combination of crispy potatoes, fragrant garlic, and aromatic parsley creates a delightful dish that is sure to impress your family and friends.
