GARLIC AND HERB TOMATOES

Categories     Salad     Tomato     Breakfast     Sauté     Quick & Easy     Healthy

Number Of Ingredients 8

3 tablespoons good olive oil
2 teaspoons minced garlic (2 cloves)
2 pints cherry tomatoes or grape tomatoes
2 tablespoons chopped fresh basil, plus more for garnish
2 tablespoons chopped fresh flat-leaf parsley, plus more for garnish
2 teaspoons chopped fresh thyme leaves
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Heat the olive oil in a saute pan large enough to hold all the tomatoes in one layer. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, salt, and pepper. Reduce the heat to low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to loose their firm round shape. Sprinkle with a little fresh chopped basil and parsley and serve hot or at room temperature.

Tips:

  • Select ripe, firm tomatoes: Choose tomatoes that are free of blemishes and have a deep, vibrant color. Look for tomatoes that are heavy for their size, as this indicates a higher water content and better flavor.
  • Use fresh herbs: Fresh herbs, such as basil, thyme, and oregano, add a burst of flavor to the tomatoes. If you don't have fresh herbs on hand, you can use dried herbs, but use only half the amount, as they are more concentrated.
  • Don't overcrowd the baking sheet: Make sure to spread the tomatoes in a single layer on the baking sheet. Overcrowding will prevent the tomatoes from roasting evenly.
  • Roast the tomatoes at a high temperature: Roasting the tomatoes at a high temperature will help to caramelize the sugars and concentrate the flavors. This will give you tomatoes that are sweet, smoky, and delicious.
  • Watch the tomatoes closely: Keep an eye on the tomatoes while they are roasting. They can go from perfectly roasted to overcooked in a matter of minutes. Once the tomatoes start to burst and the skins begin to shrivel, they are done.

Conclusion:

Roasted garlic and herb tomatoes are a versatile dish that can be enjoyed in many ways. They can be served as a side dish, appetizer, or even used as a topping for pizza or pasta. They are also a great way to use up leftover tomatoes. With their sweet, smoky flavor and tender texture, roasted garlic and herb tomatoes are sure to be a hit with everyone who tries them.
