1 1/2 pounds boneless pork loin
Kosher salt and freshly ground pepper
2 tablespoons olive oil
2 tablespoons unsalted butter
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh flat-leaf parsley
1 1/2 teaspoons minced fresh rosemary
1 clove garlic, minced
1 cup panko (Japanese breadcrumbs)
1/3 cup plus 2 tablespoons Dijon mustard
2 whole heads garlic
3 tablespoons honey

Steps:

  • 1. Preheat the oven to 375 degrees F. Sprinkle the pork with salt and pepper. Heat a large, ovenproof skillet over medium-high heat. Add the oil; add the pork and cook, turning occasionally, until browned on all sides. Transfer the pork to a cutting board.
  • 2. Return the skillet to medium heat. Add the butter, thyme, parsley, rosemary, and garlic; cook, stirring, until fragrant, about 1 minute. Stir in the panko and 1 teaspoon salt; cook, stirring, until the panko is golden, about 2 minutes. Transfer the toasted breadcrumbs to a piece of wax or parchment paper.
  • 3. Brush the pork with 2 tablespoons of the mustard and roll in the toasted breadcrumbs to coat. Return the coated pork to the skillet. Halve the garlic heads crosswise and add to the skillet. Roast until an instant-read thermometer inserted into the center of the pork registers 145 degrees F, about 45 minutes. Transfer the pork and garlic to a cutting board and let rest 10 minutes.
  • 4. Meanwhile, place the skillet over medium-low heat. Add the honey, remaining 1/3 cup mustard, and 1/4 cup water and stir until combined. Simmer until the mixture is slightly thickened, about 2 minutes. Slice the pork and serve with the roasted garlic and the mustard sauce.

1 tablespoon white balsamic vinegar

Categories     Pork

Time 1h40m

Yield 1 roast, 6 serving(s)

Number Of Ingredients 8

1 -4 lb pork roast
3 garlic cloves, peeled and slivered
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon rosemary, crumbled
2 tablespoons olive oil
salt
pepper

Steps:

  • Combine the garlic and herbs in a small bowl, toss to cover garlic with herbs.
  • Use a sharp, narrow-bladed knife and make shot openings into the meat at regular intervals.
  • Insert the herb coated garlic slivers into the openings.
  • Sprinkle the roast with salt and pepper.
  • Cook in rotisserie at 375 degrees Fahrenheit for 1 1/2 hours or longer, until cooked through.

Tips:

  • Choose the right cut of pork: A bone-in pork loin roast is the best choice for this recipe. It's a lean cut of meat that will cook evenly and stay moist. If you don't have a pork loin roast, you can also use a pork shoulder roast. Just be sure to cook it for a longer period of time, until it is fall-off-the-bone tender.
  • Use a good quality olive oil: The olive oil you use will make a big difference in the flavor of the pork. Choose a flavorful, extra-virgin olive oil. You can also use a blend of olive oil and butter.
  • Season the pork generously: Don't be afraid to season the pork liberally with salt and pepper. You can also add other spices, such as garlic powder, onion powder, or paprika.
  • Roast the pork at a high temperature: This will help to create a crispy, flavorful crust on the outside of the pork. Once the pork is roasted, let it rest for 10-15 minutes before slicing and serving.
  • Serve the pork with your favorite sides: This recipe is perfect for serving with roasted vegetables, mashed potatoes, or rice.

Conclusion:

This garlic and herb roast pork recipe is a delicious and easy way to cook pork. The pork is tender and flavorful, and the garlic and herbs give it a wonderful aroma. This recipe is perfect for a special occasion dinner or a weeknight meal.
