6 tablespoons extra virgin olive oil
1 medium onion, finely chopped
1 cup chopped green onion
4 garlic cloves, crushed
4 cups tomatoes, chopped and peeled
1 cup dry white wine
1/2 cup chopped fresh parsley
2 tablespoons fresh oregano, chopped
salt and pepper
2 lbs large raw shrimp, peeled and deveined
8 ounces crumbled feta cheese

Steps:

  • Heat oil in a skillet over medium heat. Saute onion in oil until transparent.
  • Stir in green onions and garlic; cook, stirring frequently, for 2 more minutes.
  • Stir in tomatoes, wine, parsley, oregano, and salt and pepper to taste.
  • Cover, and simmer gently for 30 minutes.
  • Preheat oven to 500 degrees F.
  • Spread half the sauce on the bottom of a large oven dish.
  • Arrange shrimp evenly over sauce, and pour the remaining sauce on top. Sprinkle with feta cheese.

1 tablespoon olive oil
1 small onion, finely chopped
1 red bell pepper, cut into bite-size squares
peri-peri or 1/4 teaspoon chopped dried chili
1/4 cup dry white wine
salt & pepper
500 g king-size prawns, deveined, but with tails attached
2 tablespoons finely chopped fresh parsley
2 tablespoons finely chopped oregano
75 g feta cheese, cubed

Steps:

  • 1. Pre-heat oven to 180C (350F). Heat oilve oil in a large frying pan over medium to high heat. Add onion and fry for 2 minutes, then add bell pepper and fry another 2 - 3 minutes or until starting to soften.
  • 2. Add tomatoes, peri-peri and wine and season to taste with salt and pepper. Bring to boiling point, cover and reduce heat. Cook for 15 minutes, then remove lid and cook another 5 minutes over medium heat to evaporate most of the liquid and allow the sauce to thicken.
  • 3. Toss prawns and herbs through, then spoon into an oven dish. Dot with feta and bake at 180C (350F) for 25 - 30 minutes.
  • Serve with orzo or crusty bread, and simply sauteed veggies or a fresh salad.

1 lb large shrimp, peeled but heads & tails left on, black intestines removed
6 medium sized tomatoes, peeled, seeded & pureed
2 Tbsp olive oil with tomatoes
3 Tbsp finely chopped parsely
3 clove garlic, finely chopped
1/3 c olive oil
10 oz feta cheese, crumbled (i usually add more than a cup)
2 Tbsp butter
salt & freshly ground pepper
tabasco sauce (optional)

Steps:

  • 1. Simmer the pureed tomatoes with the 2 Tbsp olive oil for 20 to 25 minutes. Until they become a thick sauce.
  • 2. Pour the sauce in an ovenproof dish. On top place the shrimp. Sprinkle with the parsley, garlic, olive oil and top with Feta cheese. Sprinkle with butter and season with lots of black pepper, little salt and the Tabasco sauce.
  • 3. Bake for 10 minutes, til the Feta cheece melts and bubbles. Serve with plenty of fresh bread to dip into the delicious sauce:) Enjoy!

It's usually made with veal or lamb stew meat but my family has always used chicken, which is delicious! You can use whichever you prefer! Either way this baked orzo dish will melt in your mouth! It may sound like a lot of work, but the preparation is very little! The majority of it is cooking time!

½ cup olive oil
3 pounds cubed lamb stew meat
1 (28 ounce) can whole peeled tomatoes, pureed in a food processor
4 cloves garlic, roughly chopped
½ teaspoon white sugar

1 pound uncooked orzo pasta
3 cups hot water
