Years ago, when my husband and I put in our first garden, a neighbor suggested zucchini since it's easy to grow. Our kids were reluctant to try new things, so I used our squash in this cheesy chowder-it met with solid approval from all of us! -Nanette Jordan, Flint, Michigan

This soup is amazing, my all time favorite. I found the recipe in an old Taste of Home magazine. Sometimes I add the cheddar cheese, sometimes I don't. It's delicious either way.

Tips:

  • Wash and dry the zucchini thoroughly before cutting it. This will help to prevent the chowder from becoming watery.
  • If you have time, roast the zucchini before adding it to the chowder. This will give the zucchini a slightly caramelized flavor and make it even more delicious.
  • Use a good quality vegetable broth. This will make a big difference in the flavor of the chowder.
  • Don't overcook the zucchini. It should be tender but still slightly firm.
  • Season the chowder to taste. You may want to add more salt, pepper, or herbs to your liking.
