GARDEN VEGETABLE TURKEY MEATLOAF

Garden Vegetable Turkey Meatloaf image

The oatmeal and chili sauce were inspired by another recipe I found on RecipeZaar, but I added an assortment of vegetables to add color, texture, flavor, and nutrition. I like to use the Uncle Sam oatmeal because it contains flax seeds and wheat flakes along with the oats, but you can use any rolled oats or instant plain oatmeal you have on hand.

Yield 8

Number Of Ingredients 11

2 ½ pounds ground beef
2 eggs
½ cup Italian seasoned bread crumbs
1 teaspoon salt
1 teaspoon fresh cracked black pepper
1 green bell pepper, chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 Spanish sweet onion, chopped
1 (16 ounce) package shredded Cheddar cheese, divided
1 (8 ounce) can tomato sauce, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).

Tips:

  • Choose the right vegetables: Use a variety of vegetables that will hold their shape when baked, such as carrots, celery, onions, and potatoes. Avoid vegetables that are too soft, such as tomatoes or zucchini, as they will disintegrate during baking.
  • Grate the vegetables finely: This will help them to blend in with the meatloaf and prevent them from becoming too chunky.
  • Use a good quality ground beef: An 80/20 blend of ground beef and pork is a good choice for meatloaf. The fat content will help to keep the meatloaf moist and flavorful.
  • Season the meatloaf well: Use a variety of spices and herbs to flavor the meatloaf, such as salt, pepper, garlic powder, onion powder, and paprika.
  • Mix the meatloaf thoroughly: Be sure to mix the meatloaf ingredients until they are well combined. This will help to prevent the meatloaf from becoming dry and crumbly.
  • Bake the meatloaf at a high temperature: This will help to create a crispy crust on the outside of the meatloaf and keep the inside moist and juicy.
  • Let the meatloaf rest before slicing: This will help the meatloaf to hold its shape when sliced.

Conclusion:

Garden meatloaf is a delicious and healthy way to enjoy a classic comfort food dish. By using a variety of vegetables, you can create a meatloaf that is packed with flavor and nutrients. So next time you're looking for a hearty and satisfying meal, give garden meatloaf a try.
