This southern classic is always a hit! Fresh fro the garden or not, it's still delicious.

2 lbs fresh, frozen or canned green beans ((If fresh, remove ends and break into pieces and wash the beans))
6 or 7 red potatoes (cut in pieces (I have made this using any kind of potatoes))
1 to 2 cups chicken broth or 1 (14.5 ounce can (You don't have to use the chicken broth. I just think it makes them better))
1 ham hock (Can use cooked ham, bacon, pork jowl or salt pork about a half cup, chopped)
2 to 3 cups water
1/2 teaspoon black pepper
1 teaspoon salt
1/2 cup finely diced onion (Optional)
1 teaspoon minced garlic (Optional)

Steps:

  • Combine all ingredients in a large pot, bring to a boil, then turn to medium low and cook about 1 1/2 hours until potatoes are done and water has cooked down. You can also do this in the crockpot and let cook on low 6 to 7 hours or high 4 hours.

8 small new potatoes, halved if large

4 slices bacon, cut into thirds
1 medium onion, finely chopped
2 pounds fresh green beans, ends trimmed

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

  • Wash beans thoroughly. Snap off ends and remove strings.
  • Break into 2 inch pieces.
  • Peel potatoes and cut in half.
  • In a large pot fry bacon, just until it starts to brown.
  • Add the beans and potatoes.
  • Cover with water. Bring to a boil.
  • Reduce heat and simmer on medium for about 1 hour.

½ pound smoked turkey tails
2 (14.5 ounce) cans green beans, drained and rinsed
1 large onion, chopped
10 small red potatoes, peeled and cubed
1 tablespoon seasoned salt
2 teaspoons ground black pepper
1 tablespoon garlic powder

  • Place the turkey tails and onion into a 4 quart Dutch oven and fill half way full with water. Season with salt, pepper and garlic powder. Bring to a boil, then cover and simmer over low heat until meat falls off the bones, about 2 hours. Remove the bones and skin; return the meat to the pot. Discard bones and skin.

1 red onion, chopped
