Chicken and Stuffing Bake image

This rich and creamy chicken and rice bake is a filling family-pleaser. Make this cheesy chicken and rice casserole even easier by using a deli rotisserie chicken for the chopped chicken. (This is also a great recipe to use up leftover turkey!)

Provided by BHG Test Kitchen

Time 1h25m

Number Of Ingredients 12

1 cup water
1 cup chopped red sweet pepper (1 large)
0.5 cup chopped onion (1 medium)
0.5 cup long grain rice
1 8 ounce package herb-seasoned stuffing mix
2 cup water
4 cup diced cooked chicken or turkey (about 1-1/4 pounds)
3 eggs, lightly beaten
1 10.75 ounce can condensed cream of chicken soup
0.5 cup sour cream
0.25 cup milk
2 teaspoon dry sherry (optional)

Steps:

  • In a medium saucepan bring the 1 cup water to boiling. Stir in sweet pepper, onion, and uncooked rice. Reduce heat to low. Simmer, covered, about 20 minutes or until rice and vegetables are tender and water is absorbed.
  • Preheat oven to 350 degrees F. Grease a 3-quart rectangular baking dish; set aside. In a large bowl combine stuffing mix and the 2 cups water. Stir in chicken, eggs, and half of the condensed soup. Stir in cooked rice mixture. Spread in prepared baking dish.
  • Bake, uncovered, for 35 to 40 minutes or until heated through.
  • Meanwhile, for sauce, in a small saucepan stir together the remaining soup, the sour cream, and milk. Cook over low heat until heated through, stirring occasionally. If desired, stir in sherry.
  • Let casserole stand for 5 minutes before serving. Cut into squares to serve. Spoon sauce over squares.

GARDEN CHICKEN AND STUFFING

Garden Chicken and Stuffing image

This is a "Campbell Soup" recipe, it's easy to make using ingedients you have on hand. This is a good way to use up the leftovers from a grocery store pre-cooked chicken or a turkey dinner. I like Butterball Herb Stuffing the best - it's in the freezer section. (it comes in 900g pkg. and because we prefer more stuffing I use the whole pkg.) I omit the chesse, personal preference.

Tips:

  • Choose the right chicken: For this recipe, a whole chicken is ideal, as it will provide plenty of meat for the stuffing and the soup. Look for a chicken that is about 3-4 pounds in size.
  • Make sure the stuffing is moist: The stuffing is an important part of this dish, so make sure it is moist and flavorful. Add some chicken broth or melted butter to the stuffing to help keep it moist.
  • Don't overstuff the chicken: When stuffing the chicken, be careful not to overstuff it. Too much stuffing can make the chicken difficult to cook evenly.
  • Roast the chicken at a high temperature: To ensure that the chicken is cooked through, roast it at a high temperature of 425 degrees Fahrenheit. This will help to brown the chicken and cook it evenly.
  • Let the chicken rest before carving: Once the chicken is cooked, let it rest for 10-15 minutes before carving. This will help the juices to redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

Garden Chicken and Stuffing is a delicious and versatile dish that is perfect for any occasion. Whether you are serving it for a special dinner or a casual weeknight meal, this dish is sure to please everyone at the table. With its flavorful stuffing, tender chicken, and rich gravy, this dish is a true classic.
