- 1. In large kettle or dutch oven, cook celery and onion in margarine until tender. Stir in flour until smooth. Gradually add water then bouillon, pepper and vegetables; bring to a boil. Reduce heat; cover and simmer for 15 minutes.
- 2. Add milk and cheese. Cook and stir until cheese melts and soup is hot (do not boil). Garnish as desired. Refrigerate leftovers.
Tips:
- Use a good quality vegetable broth for the best flavor. You can use store-bought or homemade broth.
- If you don't have any fresh herbs on hand, you can use dried herbs instead. Just be sure to use about 1/3 of the amount of dried herbs as you would fresh herbs.
- To make the soup creamier, you can add a cup of heavy cream or milk. Stir it in just before serving.
