1/2 lb bacon, brown sugar or cracked black pepper bacon works great
1 pkg whole mushrooms, cleaned
bbq sauce or ranch dressing for dipping
wooden skewers for grilling, soaked in water for 20-30 minutes

Steps:

  • 1. Wrap 1/2 piece of bacon around whole mushroom and slide onto skewer to secure. For an appetizer, I usually serve 3 on a skewer. Continue until mushrooms are gone. Place on grill for 15-20 minutes until bacon is done, turning occasionally. If serving with BBQ sauce, brush a little on during last 1-2 minutes of cooking.
  • 2. Serve with additional BBQ sauce or Ranch dressing or dip.

12 large stuffing mushrooms, about 2 1/2-inches in diameter (about 1 pound)
1 tablespoon extra-virgin olive oil
4 slices bacon (4 ounces)
1 shallot, halved and thinly sliced (1/2 cup)
1 teaspoon chopped fresh thyme leaves
Kosher salt and freshly ground pepper
2 cups packed baby spinach, chopped (2 ounces)
2 slices toasted white sandwich bread, finely cubed
1/4 teaspoon freshly grated lemon zest
2 ounces mild creamy blue cheese, cut into 12 strips (such as Saga)

Steps:

  • 1. Preheat the oven to 425 degrees F. Remove the stems from the mushrooms and set aside. Place the caps, stem-side down on a baking sheet and brush the outsides with the oil. Bake until soft, but still holding their shape, 15 minutes.
