2 tablespoons olive oil
1 medium onion, chopped
3 garlic cloves, crushed
1/4 teaspoon crushed red pepper flakes
1 1/2 lbs medium shrimp, shelled, tails removed
1/2 cup butter
1/2 cup white wine
3 tablespoons parsley, finely chopped (1 Tbsp dry)
salt and pepper
8 ounces angel hair pasta, cooked according to package directions

Steps:

  • HEAT oil in a sauté pan. Add onion and sauté 2 minutes. Add garlic and red pepper; do not brown garlic. Sauté 1 minute. Add shrimp, cook 1-2 minutes.
  • ADD butter, wine, parsley, salt and pepper. Simmer until sauce thickens slightly & shrimp turn from opaque to pink.
  • PLACE cooked, drained pasta on large platter. Evenly distribute shrimp and sauce over pasta and serve immediately.

1 pound peeled shrimp

1 cup sliced onions

2 Poblano chiles, stemmed, seeded and cut into strips
1 1/2 cups chopped canned tomato, seeds and juice removed

1/2 pound large shrimp, peeled
2 teaspoons sea salt
1/4 cup extra-virgin olive oil
2 large cloves garlic, finely chopped or passed through a garlic press
pinch of dried red-pepper flakes, or 1 or 2 whole dried peperoncini (hot peppers)
1/4 teaspoon salt, or to taste
2 tablespoons dry white wine
1 tablespoon chopped fresh Italian parsley

  • Remove the dark intestinal veins from the shrimp. As you do, make each cut deep enough to butterfly the shrimp, so each can be opened flat like a book.
