One thing Keith and I dearly love to do is to visit the local Maryland and Pennsylvania vineyards. We have a favorite where we go on summer evenings with a picnic basket. They have a dance floor under the stars and live Big Band on Friday and Saturday nights. It's so wonderful to hear the tunes from WWII and the swing era. Since it's out in the country there are no street lights. So if you can imagine dancing cheek to cheek with your honey surrounded by thousands of fireflies-- well, it's really dreamy! And what's Bewitched got to do with it? Well all the recipes are named after Bewitched characters. Hmmm...I think I'll have to post a Harvey Wallbanger cake, too! *****Established towards the end of the 19th century, Galliano, (also known as Liquore Galliano) is a sweet, yellow Italian herbal liqueur. Named after Italian-Abyssianian military war hero, Major Giuseppe Falliano, Galliano is flavored with various herbs, flowers and spices, including anise, licorice and vanilla, giving it an unique taste. Its popularity is associated with the Harvey Wallbanger. From this has sprung a huge demand for Galliano as a straight liqueur, in mixed drinks and for cooking.

1 fluid ounce Galliano
1 fluid ounce Amaretto
1 fluid ounce pineapple juice
1 dash cranberry juice
3/4 ounce Galliano
3/4 white Creme de Cacao
3/4 ounce cream
1/3 ounce Galliano
1/2 ounce brandy
3/4 ounce canadian whiskey
1/2 ounce sweet vermouth
1/2 ounce mandarin liqueur

6 boneless, skinless chicken breast halves,
pounded 1⁄8" thick
Kosher salt and freshly ground black pepper,
to taste
12 tbsp. herbed goat cheese, softened
6 thin slices prosciutto
6 tbsp. unsalted butter, chilled
10 oz. cremini mushrooms, sliced
Flour, for dredging
2 tbsp. canola oil
1 1⁄2 cups chicken broth
1 ⁄4 cup Galliano liqueur
1 tbsp. finely chopped parsley
4 cups cooked rice, for servin

Steps:

  • Prepare chicken: Season chicken with salt and pepper. Working with one breast half at a time, spread one side with 2 tbsp. goat cheese and top with one slice prosciutto; Roll into a tight cylinder and using kitchen twine, tie chicken roll 1" in from each end. Snip off excess twine. Cooking Heat 3 tbsp. butter in a 12" skillet over medium-high heat. Add mushrooms and cook, without stirring, until browned, 4-5 minutes. Stir mushrooms and continue cooking until softened, about 8 minutes. Transfer to a plate; wipe out skillet. Put flour on a plate; dredge each chicken roll in flour. Heat 2 tbsp. butter and the oil in skillet over medium-high heat. Add chicken and cook, turning, until browned and cooked through, 12-14 minutes. Transfer chicken rolls to a plate. Add broth and Galliano to skillet; boil, stirring, until sauce has reduced by a third, 4-5 minutes. Return mushrooms and chicken to skillet; cook, turning to coat in sauce, until warmed through, about 5 minutes. Plating 3. Transfer chicken to a platter. Remove skillet from heat; swirl in remaining butter to make a smooth sauce. Spoon sauce over chicken; sprinkle with parsley. Serve with rice.

6 Boneless, skinless chicken breasts (organic are better)
12 ounces Chicken stock
1 package Boursin or Alouette Cheese
16 ounces Fresh, sliced button mushrooms
4 ounces Galliano
1 stick Butter
3/4 cup Seasoned flour (thyme, salt, pepper)
6 sprig Fresh parsley

Steps:

  • Wash and dry chicken. Pound out on the underside.
  • Spread chicken with cheese, roll up, secure with toothpicks, and roll in seasoned flour to coat (including ends).
  • Heat about 1/2 stick of butter and brown chicken rolls.
  • Once browned on all sides, add chicken broth and Galliano to cooking chicken. Simmer about 30 minutes.
  • At this point, you can cool and freeze if you like.
  • In another pan, melt remaining butter and sauté mushrooms.
  • Season with salt, pepper, and fresh parsley, and pour over chicken and sauce.
  • Serve with rice or egg noodles. Garlic noodles are also good!

1 qt vodka
15 whole cloves
2 c granulated sugar
1 Tbsp vanilla
1 tsp anise extract
1/4 tsp peppermint extract
4 or 5 dash(es) yellow food coloring

Steps:

  • 1. In a gallon GLASS bottle, not plastic, put 1 cup of the vodka and the cloves. Let this set for 10 days, Remove the cloves and add the sugar, and remaining 3 cups of vodka, vanilla, anise and peppermint. Stir well- add coloring. Let set for 2 weeks. Pour into bottles and enjoy! enjoy!

1 teaspoon chopped crystallized ginger
4 cups white sugar
12 drops peppermint extract
2 teaspoons vanilla extract
1 teaspoon anise extract
15 drops yellow food coloring
2 (750 milliliter) bottles vodka

Steps:

  • Place the cloves and ginger in a small jar and add enough vodka to cover. Seal and soak for 3 days. NO MORE! Strain the liquid, discarding the solids.
  • Measure the sugar into a gallon container. Add the peppermint, vanilla and anise extracts as well as the food coloring. Pour in the vodka, the strained vodka and yellow food coloring. Cover tightly and shake until the sugar dissolves. Age for one week MINIMUM.
