Recipe by Nicole Routhier, found in "Classic Cooks". The marinade and chilli sauce is to-die-for! Prep time includes marinating time. You can baste with marinade when grilling the skewers. Can also do without skewers; just don't cut chicken too small.

2 lbs boneless skinless chicken breasts, trimmed and halved (approx 8)
marinade
3 cloves garlic, chopped
1 stalk thick lemongrass, peeled and thinly sliced
2 tablespoons sugar
1/2 teaspoon chili paste
1 tablespoon fish sauce
1 tablespoon soy sauce
1 tablespoon sesame oil
2 tablespoons peanut oil (or other vegetable oil)
1 teaspoon five-spice powder
1 fresh red chile, finely chopped
2 tablespoons sugar
2 tablespoons lime juice
4 tablespoons rice vinegar (or distilled white vinegar)
4 tablespoons fish sauce
2 cloves garlic, finely chopped
4 tablespoons hot water

Steps:

  • Place all marinade ingredients in food processor and blend till pureed.
  • Transfer to large mixing bowl.
  • Cut each chicken breast half lengthways into 4 strips.
  • Lightly pound the strips to 1 cm/half inch thick using meat mallet or flat side of cleaver.
  • Cut the strips in half and add to marinade.
  • Toss well to coat with marinade.
  • Cover and leave to marinate at room temperature for 1 hour or overnight in fridge.
  • Soak 48 bamboo skewers in salted hot water for 30mins.
  • Prepare the barbeque or preheat grill.
  • Thread a slice of chicken on to each skewer.
  • Grill each skewer, turning once, until chicken is browned on both sides and cooked through, about 3-4mins.
  • Serve immediately, with chilli dipping sauce.
  • Chilli Dipping Sauce: Mix all ingredients in a small bowl.
  • Stir to dissolve sugar.
  • Transfer to jar, cover and store in fridge up to a week, if not using immediately.

The best five-spice chicken I have had in Vietnam was made by a street food vendor in the port town of Hoi An in the central region. The vendor used a spice mix of freshly toasted star anise and turmeric. When she grilled the chicken, the whole neighborhood was perfumed with the most enticing fragrance. This is my version of that dish.

1 whole chicken (about 2 1/2 pounds), preferably free range, rinsed
3 tablespoons vegetable oil
2 tablespoons soy sauce
3 tablespoons minced ginger
2 tablespoons minced garlic
2 tablespoons sugar
2 teaspoons ground turmeric
1 teaspoon Chinese five-spice powder
1/2 tablespoon sea salt
4 whole star anise, lightly toasted in a dry pan for 3 minutes, pounded or ground into a fine powder
1/2 cupSoy-Lime Dipping Sauce

Steps:

  • 1. Cut the chicken into 6 pieces and make 1 or 2 slashes in each piece for faster cooking. Trim and discard any excess fat. Pat the chicken dry.
  • 2. In a bowl, combine the oil, soy sauce, ginger, garlic, sugar, turmeric, five-spice powder and salt. Stir well to blend. Add the chicken pieces and turn several times to coat them evenly. Marinate in the refrigerator for at least 4 hours.
  • 3. Start a charcoal grill or preheat a gas grill to moderate heat. (You can also use a broiler.) Thirty minutes before cooking, add the freshly toasted star anise powder to the marinated chicken, turning so the meat is coated evenly.
  • 4. Place the chicken, skin side up, on the grill. Cook 10 minutes, then turn over and grill until the chicken is cooked and the juices run clear, another 10 minutes, depending on the thickness. While grilling, move the chicken pieces around so that they cook evenly. Transfer the chicken to a serving platter and serve with the dipping sauce.

2 tablespoons rice wine or 2 tablespoons other cooking wine

2 eggs, beaten

I got this recipe from www.recipe4living.com I haven't try it yet. I love cilantro and lime juice. I had a jar of five spice for years and I never use it because it has cloves and I don't like them; until I tried recipe#151453 and fell in love with it (not with the cloves, but the whole combo). Now I use five spice a lot. I hope is great in this recipe also. Cooking time does not include marinating time. PS: I do not have a rotisserie

1/4 cup orange juice concentrate
1/4 cup soy sauce
1/4 cup fresh lime juice
1/4 cup fresh cilantro, finely chopped
1 tablespoon sesame oil
1 tablespoon garlic, minced
1 teaspoon Chinese five spice powder
1/2 teaspoon fresh ground black pepper
1 (4 lb) whole chickens

Steps:

  • To make the marinade: In a medium bowl whisk together the marinade ingredients.
  • Remove and discard the neck, giblets, wing tips, and any excess fat from the chicken. Rinse the chicken, inside and out, under cold water and pat dry with paper towels. Place the chicken in a large, resealable plastic bag and pour in the marinade. Press the air out of the bag and seal tightly. Turn the bag to distribute the marinade, place the bag in a bowl, and refrigerate for 6 to 8 hours, turning the bag occasionally. Remove the chicken from the bag and discard the marinade.
  • Truss the chicken with cotton string. Center the chicken lengthwise on the spit and adjust on the rotisserie. Let the chicken rotate over Indirect High heat until the juices run clear and the meat is no longer pink at the bone, 1 to 1-1/4 hours (check the chicken after 30 minutes; if the skin is browning too quickly, reduce the heat to Indirect Medium). When the chicken is fully cooked, turn off the rotisserie and, using barbecue mitts, remove the spit from the rotisserie and slide the hens from the spit onto a cutting board. Be careful not to splatter yourself with the hot juices. Allow the chicken to rest for a few minutes. Cut the chicken into serving pieces. Serve warm.

2 tablespoons vegetable oil
4 onions, thinly sliced
