CREAMY FUSILLI WITH CARROTS, PEAS AND BREADCRUMBS

Creamy Fusilli with Carrots, Peas and Breadcrumbs image

This pasta has such a beautiful, creamy and crunchy texture, and a very rustic, earthy flavor. Even though it's full of carrots and peas, my friends used to beg my mom to make this dish when they came for dinner--even back in elementary school!

Time 30m

Yield 2 to 3 servings

Number Of Ingredients 12

Kosher salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
3/4 cup seasoned breadcrumbs
1/2 cup finely chopped shallots
1 small clove garlic, minced
1 cup frozen peas, thawed
3/4 cup chicken stock or low-sodium chicken broth
1 1/4 cups finely grated carrots (see Cook's Note)
1/4 cup heavy cream
1/2 pound fusilli (see Cook's Note)
3 to 4 tablespoons minced mint leaves
Freshly grated Parmigiano-Reggiano, for serving

Steps:

  • Bring a large pot of salted water to a boil.
  • Meanwhile, heat 2 tablespoons of the olive oil in a small skillet over medium heat. Add the breadcrumbs and cook, stirring occasionally, until golden and crunchy, 5 to 7 minutes. Set the toasted breadcrumbs aside in a small bowl.
  • Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-low heat. Add the shallots and garlic and cook, stirring occasionally, until they are soft and translucent, 3 to 4 minutes.
  • Add the peas and chicken stock to the skillet and simmer until the stock is hot, 3 to 4 minutes. Stir in the carrots and continue to simmer until the carrots are tender, 5 to 7 minutes. Stir in the cream and season with salt and pepper. (This is a good time to boil your pasta.) Simmer until the reduces by one-fourth, about 5 minutes. Set the sauce aside; cover and keep warm while you cook the pasta.
  • Add the pasta to the boiling water and cook according to the package directions, stirring occasionally, until al dente. Drain and toss with the sauce, about half of the breadcrumbs and all of the mint.
  • Divide the pasta into bowls and top with a sprinkle of the remaining breadcrumbs and some Parmigiano-Reggiano.

SPAGHETTI WITH GARLICKY BREAD CRUMBS AND ANCHOVIES

Spaghetti With Garlicky Bread Crumbs and Anchovies image

This is a take on a classic dish from Southern Italy that tosses pasta with toasted, seasoned bread crumbs called pangrattatto. In this version, the bread crumbs are sautéed in olive oil with garlic and anchovies until golden and crisp, and the pasta is coated with egg yolks, hot sauce and Asian fish sauce for creaminess and depth. You can make the bread crumbs up to 3 hours ahead; longer than that and you risk letting them go soggy. Use good-quality bread crumbs here, either homemade or purchased from a bakery. The next best choice is panko, Japanese bread crumbs that you can find in large supermarkets. If you have any of the pangrattatto mixture left over, store it in the refrigerator and give it a brief sauté to revive it before using.

Time 30m

Yield 4 servings

Number Of Ingredients 12

1/3 cup extra-virgin olive oil, more as needed
12 anchovies, chopped
6 garlic cloves, minced
1/4 teaspoon red pepper flakes
1 cup good dried bread crumbs
Black pepper and kosher salt, as needed
1 pound spaghetti
2 egg yolks
1 tablespoon Asian fish sauce (optional)
1 teaspoon hot sauce, such as Tabasco, or to taste
1/2 cup roughly chopped parsley
Lemon wedges, for serving

Steps:

  • In a medium skillet over medium-high heat, warm oil. Add anchovies, garlic and red pepper flakes; cook until fragrant, 1 minute. Stir in bread crumbs and cook until golden, 2 to 3 minutes. Season liberally with black pepper, and a little salt if needed.
  • Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions; drain well, reserving some of the pasta water (about 1/2 cup is plenty).
  • In a large, preferably warmed bowl, stir together egg yolks, fish sauce, hot sauce and 2 tablespoons pasta water. Add hot pasta and toss well, adding more pasta water if the mixture looks dry or unevenly yellow. You want the yolk to evenly coat the pasta but you don't want it to be soupy. Add bread crumb mixture and parsley and toss well. Season with plenty of black pepper, and salt to taste. Drizzle pasta with more oil just before serving and serve with lemon wedges.

Categories     Bread     Garlic     Bake

Yield makes a little over 1 cup

Number Of Ingredients 4

1 pound stale bread, sliced
1/4 cup extra-virgin olive oil
2 cloves garlic, smashed with a knife
Kosher salt

Steps:

  • Preheat the oven to 350°F.
  • Place the bread slices on a baking sheet and bake until lightly toasted and dry, 10 to 12 minutes. While the bread toasts, place the olive oil and garlic in a sauté pan and set over low heat. Cook gently, allowing the garlic to infuse the oil.
  • When the bread slices are toasted, place in a food processor and pulse until finely ground. Add the crumbs to the garlic oil and stir gently until coated. Season to taste with salt and cook for 2 to 3 minutes, or until the oil is absorbed. Remove the garlic cloves. The crumbs will keep in an airtight container at room temperature for about 2 weeks.

FUSILLI WITH TOASTED GARLIC BREADCRUMBS

Fusilli With Toasted Garlic Breadcrumbs image

This is a Tuscan peasant dish. I used the longer version of Fusilli pasta for this, but I believe spaghetti would work just fine. Adapted from Williams-Sonoma, Kitchen Library, Pasta series.

Tips:

  • Use fresh breadcrumbs: Making your own breadcrumbs from stale bread ensures the freshest flavor and texture.
  • Toast the breadcrumbs properly: Toasting the breadcrumbs in a pan with olive oil and garlic infuses them with a delightful savory flavor.
  • Choose the right pasta: Fusilli pairs well with the toasted breadcrumbs, but other short pastas like penne or rotini would also work.
  • Cook the pasta al dente: Al dente pasta has a slight bite to it, which holds the sauce and toppings better.
  • Use good quality olive oil: Extra virgin olive oil adds a rich, fruity flavor to the dish.
  • Add some chili flakes: A pinch of chili flakes adds a subtle heat that complements the garlic and breadcrumb topping.
  • Garnish with fresh herbs: A sprinkle of chopped parsley or basil adds a fresh, vibrant touch to the dish.

Conclusion:

Fusilli with Toasted Garlic Breadcrumbs is an easy-to-make yet flavorful pasta dish that combines simple ingredients to create a satisfying meal. The combination of toasted breadcrumbs, garlic, olive oil, and chili flakes creates a savory and aromatic topping that pairs perfectly with the cooked fusilli. This versatile dish can be customized to suit different tastes, making it a great option for a quick and delicious weeknight dinner or a casual gathering with friends and family.
