Steps:
- Make the strawberry dipping sauce: Add the strawberries, sugar, and lemon juice to a small pot over medium-high heat and bring to a boil. Reduce the heat to medium-low and simmer for 30 minutes, until thickened. Remove the pot from the heat and set aside until ready to serve.
- Make the caramel dipping sauce: Add the sugar to a small pan over medium heat. Without stirring, cook the caramel for about 10 minutes, swirling the pan occasionally to loosen any clumps of sugar. Once the sugar turns dark amber in color, remove the pot from the heat. Add the butter and heavy cream and whisk to combine. Be careful as the mixture will bubble up and could burn you. 3. Add the salt and stir to combine. Remove the pan from the heat and set aside until ready to serve.
- Make the fries: Heat 1 inch (2.5 cm) of oil in a deep pan over medium-high heat until it reaches 375°F (190°C).
- In a large bowl, mix together the flour, sugar, baking powder, and salt.
- Add the milk and eggs to the dry ingredients. With a rubber spatula, stir until fully incorporated.
- Transfer the batter to a clean squeeze bottle.
- Working one at a time, squeeze the batter into hot oil. Cook for 30-45 seconds on each side until golden brown. Remove from the oil with a slotted spoon and drain on a paper wire rack over a baking tray.
- Make the marshmallow dipping sauce: Add the marshmallows and butter to a microwave-safe bowl and microwave for 1 minute in 30-second intervals, stirring until smooth.
- Make the chocolate dipping sauce: Add the chocolate chips and coconut oil to a microwave-safe bowl and microwave in 30-second intervals, stirring between, until melted.
- Dust the funnel cake fries with powdered sugar and serve with the dipping sauces.
- Enjoy!
AMISH FUNNEL CAKE
I found this recipe a few years ago, having a craving for a funnel cake I found about 10 that sounded good, and simple, but this one was the best tasting one that I found...and yes, of course it would be the last one that I tried out of the 10 or so that I found. Splenda works well in place of sugar also.

Steps:
- Beat the eggs, then add the milk and sugar.
- sift 2 cups of flour to baking powder and salt.
- add to the milk, sugar, and egg mixture.
- mix well, adding more flour to mixture until it becomes a smooth batter and not too thick.
- The funnel should have an opening of at least 1/2 inch and be able to hold around a cup of batter.
- put your finger over the bottom and add the cup of batter. remove your finger and allow the batter to pour into the center of the oil. Be careful, the oil may splash a little.
- gradually 'swirl' the batter outward in a circular motion or criss cross back and forth to make a cake about 7 to 8 inches around.
- Check it with a pair of tongs and turn it when the bottom becomes golden brown.
- it's usually pretty fragile and will probably try to break on you when flipping. when both sides are done -- remove and place and paper towel to drain oil.
- you can top with powdered sugar, syrup, etc --
- enjoy. It will make about 6 cakes.
- If you don't have a funnel, you can twist a paper plate into a 'funnel', it will probably be a little messy unless you can tape it up or something.

- Pour enough oil into a large Dutch oven to come 2 inches up the side. Clip a deep-fry thermometer to the pot and heat over medium-high heat until the thermometer reaches 370 degrees F.

Transfer to a clean wire rack set over a rimmed baking sheet to drain. Let cool slightly before dusting with confectioners' sugar. Serve the funnel cake bites drizzled with Strawberry Sauce and with chocolate hazelnut spread for dipping.
- Combine the strawberries, sugar and lemon juice in a medium saucepan over medium heat. Bring a boil, then reduce the heat and simmer, stirring occasionally, until the berries break down, about 10 minutes. Put the mixture in a blender and blend until smooth. Let cool completely, about 30 minutes.

- In a large mixing bowl, beat the wet ingredients together until top is slightly frothy.

- When all ingredients are combined into a smooth creamy mixture it is time to cook.
- Check your oil temperature, take a small drop of batter and drop it into the pan -- It should take just about 45-60 seconds to start browning on one side. Adjust the heat accordingly.

Cook until golden brown on both sides, remove from heat with metal spatula and place on a plate with wire strainer. Repeat until all the batter is gone.

COUNTY FAIR FUNNEL CAKE RECIPE - (4.3/5)

Steps:
- Preheat oil in an 8-inch skillet to 360° F over medium-high heat. Use a deep-fry thermometer for accuracy. While the oil heats, whisk together the flour, baking powder, and salt in a small bowl. Set aside. In a medium mixing bowl and using a mixer, beat together the egg and milk on low speed for about 10 seconds, just to blend well. Beat in the flour mixture until smooth. (The batter should be able to pass through the funnel opening.. if it's too thick, add a dab more milk.. if too thin, add a bit more flour. I did not need to add either.) When oil is ready, put your finger over the funnel hole and spoon about 2/3 cup batter into the funnel. (My funnel was small so I filled it to the top, worked out perfect.) Holding the end of the funnel close to the oil, remove finger from the opening and release batter into the oil in a circular motion. Fry until bottom side is light golden, then using a wide spatula and tongs, carefully flip it over and fry second side for 1 minute. Remove to a paper towel lined wire rack to drain. Repeat process for the other funnel cake. Transfer cakes to 2 serving plates and dust with a humongous amount of sifted confectioners sugar!! Then pull it apart with your fingers and enjoy! Delicious too, with some real maple syrup.

Steps:
- 1. Mix Egg and Milk together. Sift dry ingredients together until well mixed. Gradually add dry mix to egg/milk mixture, beat until smooth.
- 2. Preheat oil in skillet to 375 degrees F I used an electric non-stick skillet but I had to increase the temperature (425+) to get correct browning without sogginess. Just adjust this as you see fit.
- 3. When oil is hot, drizzle slowly in a swirling motion crossing layers till it's about the size of salad plate. Fry to a deep golden brown then turn over and brown the other side. Remove and place on several paper towels to absorb the excess oil.
- 4. While your funnel cake is still hot add powdered sugar to suit your taste. Serve while still warm. You can add additional toppings such as : Flavored syrups Fresh or Canned Fruits Whipped Cream Etc.

Steps:
- To beaten eggs, add milk and sugar. In separate bowl sift dry ingredients. Add to egg mixture, beating until smooth. Heat oil to 375 degrees and pour batter into hot fat through a regular household funnel. Control the flow of batter by holding your finger over the bottom of the funnel. Make patterns, designs, swirls or whatever with the stream of batter as it flows into the hot fat. When "cakes" are golden brown, drain, sprinkle with confectioners' sugar and serve warm. I used a quart size ziplock freezer bag with the tip cut off instead of a funnel.
Tips:
- Use the right batter. The batter for funnel cake should be thin and pourable, but not too runny. It should also be well-seasoned with sugar, salt, and baking powder.
- Heat the oil to the right temperature. The oil should be hot enough to fry the funnel cake without burning it. The ideal temperature is between 350 and 375 degrees Fahrenheit.
- Pour the batter in a thin stream. When pouring the batter into the hot oil, use a circular motion to create a spiral shape. This will help the funnel cake cook evenly.
- Fry the funnel cake until it is golden brown. The funnel cake should be fried for about 2-3 minutes per side, or until it is golden brown and crispy.
- Drain the funnel cake on paper towels. After frying, drain the funnel cake on paper towels to remove any excess oil.
- Serve the funnel cake with your favorite toppings. Funnel cake can be served with a variety of toppings, such as powdered sugar, cinnamon sugar, fruit, or whipped cream.
Conclusion:
Funnel cake is a delicious and easy-to-make treat that can be enjoyed by people of all ages. With the right ingredients and a little bit of practice, you can make perfect funnel cake at home. So what are you waiting for? Give it a try today!
