1 large banana
2 tablespoons peanut butter
2 tablespoons chocolate syrup or 2 tablespoons powdered chocolate milk mix
1/2 cup skim milk

Funky Monkey's were born out of one overipe banana and me making peanut butter chocolate chip cookies for my husband. They are three of my favorite flavors and are an explosion of yummy goodness as you settle back in front of the fire with a warm cup of milk and a couple of soft warm cookies.

1/2 c butter or margarine, softened
3/4 c brown sugar
1 1/8 c white sugar
2 eggs
1 tsp vanilla
1/2 banana
1/2 c peanut butter
1 1/2 c all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/4 c rolled oats
1 1/2 c semisweet chocolate chips

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Ina a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla, bananas and peanut butter.
  • 3. Combine the flour, baking powder, baking soda and salt; gradually stir into the creamed mixture. Finally stir in the rolled oats and chocolate chips.
  • 4. Drop by rounded spoonfuls onto an ungreased cookie sheet.
  • 5. Bake 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet 2 minutes before removing to wire rack to cook.

¼ cup fat free sweetened condensed milk
