SPICY CAJUN POPCORN CHICKEN WITH A SMOKEY HONEY MUSTARD SAUCE



Spicy Cajun Popcorn Chicken with a Smokey Honey Mustard Sauce image

So I started to think about popcorn beyond just a seasoned snack. Then I thought about popcorn chicken and a light went off... Popcorn-crusted chicken. For this recipe, I used SkinnyPop popcorn, a healthier popcorn option. Ooooh then I wanted it spicy (enter Cajun seasoning) and oooooh, it needed sauce (enter My Smokey Honey Mustard Sauce).

Yield 6-8

Number Of Ingredients 18

1/4 Cup all purpose flour
1/2 tsp salt (, plus more)
1/4 tsp pepper (, plus more)
2 Large eggs
2 tbsp cold water
Boneless, skinless chicken breasts, (, cubed)
1 tbsp cajun seasoning:
2 tsp sweet paprika
2 tsp garlic powder
1 tsp salt
1 tsp black pepper
1 tsp onion powder
1 tsp (dried) oregano
1 tsp (dried) thyme
1/4-1/2 tsp cayenne pepper ((to taste))
1/4 Cup Mayonnaise
2 tbsp honey mustard
2 tbsp of your favourite Mesquite Barbeque Sauce

Steps:

  • Combine the flour, salt and pepper in a bag or bowl.
  • Mix all ingredients together and store in an air-tight container for up to 6 months.
  • Whisk the egg and water together in a medium-sized bowl; season with salt and pepper.
  • Pour the popcorn into a third bowl.
  • Working in batches, coat the chicken in the flour, then dip it into the egg wash and then dip it into the popcorn, gently pushing the popcorn on to the chicken pieces to make sure they adhere.
  • Place the coated chicken pieces onto a non-stick baking sheet.
  • Repeat until all the chicken pieces are coated.
  • Season evenly with half of the the Cajun spice.
  • Let the chicken rest in the fridge for 30 minutes (or up to 24 hours if you want to make a head of time, just make sure you cover the chicken well with plastic wrap) before you put it in the oven.
  • Preheat your oven to 375.
  • Flip the chicken pieces over and season with the remaining Cajun seasoning.
  • Bake for 15-18 minutes.
  • Season with a touch more salt and pepper as soon as you take the chicken out of the oven.
  • Let the chicken rest for 5 minutes before transferring to a serving platter.
  • Serve with My Smokey Honey Mustard Sauce:
  • Mix all ingreditents together and then refrigerate until serving.

This has fettuccini tossed with sauteed chicken, mushrooms, onions, red and green peppers and a spicy, tomato creole sauce. It is an amazing combination of flavors, you'll be full long before you've had enough.

1/4 cup butter
1 green bell pepper, chopped
1 red bell pepper, chopped
1/2 white onion, sliced and quartered (1 cup)
1 garlic clove, pressed
2 boneless skinless chicken breast halves
2 tablespoons olive oil
1 medium tomatoes, chopped
4 -6 mushrooms, sliced (1 1/4 cup)
1 cup chicken broth
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
1/4 teaspoon paprika
1/4 teaspoon dried thyme
12 ounces fettuccine
2 teaspoons parsley, fresh is preferred

Steps:

  • Melt 2 tbs butter in large skillet over medium-high heat. Saute the bell peppers, onions and garlic in the butter for 8-10 minutes until softened slightly. If you like your veggies blackened in this type of dish, like I do, give them a couple more minutes until the edges start to turn black.
  • While the veggies are cooking, cut the chicken breast into bite size pieces.
  • Prepare a medium size pan over high heat with the olive oil. When the pan is hot, add the chicken and cook, stirring for 5-7 minutes, or until the chicken is no longer pink.
  • When the vegetables are softened or blackened to your liking, add the chicken to the pan.
  • Add the tomatoes, mushrooms, chicken stock, 1/4 tsp salt, cayenne pepper, paprika, pepper and thyme and simmer for 10-12 minutes until thickened. If you like your sauce a little thicker, just add 1/2 teaspoon cornstarch to a couple tablespoons of the liquid from the saucepan. Stir until smooth, remove pan from heat and whisk in cornstarch/sauce mixture, then put back on the heat.
  • While the sauce is simmering, prepare fettucini according to package directions and serve sauce over plated noodles. Sprinkle a little parsley over each serving to complete.

cayenne pepper (I use about 1/8 - 1/2 teaspoon)
salt

Steps:

  • Set oven to 300 degrees.
  • In a large bowl, mix/toss the popcorn with the melted butter.
  • In another small bowl combine paprika, garlic powder, onion powder, cayenne pepper and salt.
  • Sprinkle the paprika mixture over the popcorn in the bowl; toss to coat evenly.
  • Spread the popcorn evenly in a single layer on a baking sheet.
  • Bake for about 10 minutes.
  • Best served warm.
