FUDGY OATMEAL BARS
I received this recipe from my sister-in-law, and it's been a big hit with our family. My husband and I are wheat and cattle farmers and we have three children.

- In a large bowl, cream sugar and butter until light and fluffy. Beat in vanilla and eggs. Combine the flour, baking soda and salt; gradually add to creamed mixture. Stir in oats by hand. Press two-thirds of mixture into a greased 15x10x1-in. baking pan. , For filling, heat butter, milk and chocolate chips in a saucepan over low heat, stirring constantly, until chocolate is melted. Remove from heat; stir in the nuts, vanilla and salt. Spread over oat mixture in pan. , Drop reserved oat mixture by teaspoonfuls onto filling. Bake at 350° for 25-30 minutes. Cut into bars while warm.

- 1. Heat oven to 350 degrees. Grease 13x9 pan. Mix brown sugar, 1 cup of butter, eggs and 1 tsp. of vanilla in a large bowl. Stir in flour, baking soda,and 1/2 tsp. of salt.Stir in oats.Press mixture in pan.
- 2. Heat chocolate chips, condensed sweetened milk, and 2 tlbs. butter. Now this is where I add the peanut butter.Cook in 2 quart pan on low heat til chocolate is melted.Remove from heat. Stir in nuts, 1 tsp. vanilla and 1/2 tsp. salt.Spread over oatmeal mixture. Bake till golden brown 25-30 minutes.While warm cut into bars. I occasionally keep out some of the oatmeal mixture out and then apply it the top of the chocolate.
Tips:
- For the best results, use old-fashioned rolled oats. Quick-cooking oats will not work well in this recipe.
- Be sure to measure the flour correctly. Too much flour will make the bars dry and crumbly.
- Do not overmix the batter. Overmixing will make the bars tough.
- If you do not have a 9x13 inch baking pan, you can use a 9x13 inch glass or ceramic baking dish.
- The bars are best when they are slightly warm. You can serve them with a scoop of vanilla ice cream or whipped cream.
