4 ounces butter
6 ounces semi-sweet chocolate
1 teaspoon vanilla extract
2 cups sugar
5 3/4 ounces evaporated milk
10 large marshmallows
1 cup chopped nuts

Steps:

  • Combine the butter, chocolate, and vanilla extract in a medium bowl. Set aside.
  • Place the sugar, evaporated milk, and marshmallows in medium saucepan.
  • Bring to a boil over medium heat, stirring frequently. Monitor the temperature using a candy thermometer.
  • When the mixture reaches the soft-ball stage (234-240°F), reduce the heat to low and cook for 6 minutes, and do not stir the fudge during this cooking time.
  • Pour the hot mixture into the bowl with the butter, chocolate, and vanilla.
  • Beat with an electric mixer until the fudge is thick and dull (this doesn't take long).
  • Stir in the nuts.
  • Pour the fudge into a lightly buttered 8x8-inch baking pan.
  • Refrigerate for several hours until firm.

I was the greeter, passing out candy, etc. When the season was over I was given the SEES's Book, with two pages signed by my co-workers. Also the recipe by the manager for Fudge made with the Famous SEE's semi-sweet CHOCOLATE CHIPS! I have seen a few recipes...

4-1/2 c sugar
1 can(s) evaporated milk
16 oz semi-sweet see's chocolate chips 16 oz.
1/2 c butter
2 tsp vanilla
8 oz marshmallow creme
dash salt
walnuts

Steps:

  • 1. In a saucepan stir together sugar and evaporated milk, bring to a boil for exactly 7 minutes. Remove from heat. Add chocolate chips, butter,vanilla, marshmallow creme, and salt. Stir till all melts. Add walnuts if desired. Pour into a buttered 13X9 inch pan. Cool in refrigerator over night. Cut into desired squares....and enjoy! This makes 5 lbs.

16 ounces milk chocolate ((I use two 8 ounce Hershey bars broken into pieces))
24 ounces semi-sweet chocolate chips ((I use the Guittard brand))
1/2 cup butter
1 jar marshmallow creme (fluff) ((7-8 ounce jar))
4 1/4 cups sugar
12 ounces evaporated milk

Steps:

  • Combine chocolate bars, chocolate chips, butter, and marshmallow whip in a large mixing bowl. Set aside.
  • In a large saucepan, combine sugar and evaporated milk. Bring to a rolling boil over medium heat. Stir constantly for 4 minutes.
  • Pour cooked ingredients over chocolate in mixing bowl in 4 to 6 intervals, stirring constantly until smooth.
  • Pour into a buttered 9x13 glass baking dish. Cover tightly and refrigerate until hardened (several hours, best if overnight). Keep refrigerated until you serve.

This is the original See's fudge recipe I found when I did a Google search HISTORICAL NOTE: Given to Amy DeVore by Emma Julian c. 1930, this is "supposedly" the original recipe for See's Fudge, produced by the See's Candy Company, Los Angeles. Emma allegedly worked for See's and later owned her own candy store.

4 1/2 cups sugar
3 (12 ounce) packages chocolate chips
1/2 lb margarine
1 teaspoon vanilla
1 (12 ounce) can evaporated milk
7 ounces marshmallow cream
2 cups nuts

Steps:

  • Mix 4 1/2 cups sugar with one (1) can evaporated milk.
  • Boil 7 to 8 minutes, stirring often (rolling boil).
  • Mix together in a large bowl; 3 packages chocolate chips, 7 oz. jar marshmallow cream, 1/2 lb. melted margarine.
  • Cream margarine and marshmallow together and add chocolate chips.
  • Pour hot mixture over chocolate mixture.
  • After chocolate has melted, add 2 cups of nuts and 1 teaspoons of vanilla, blend well, pour into buttered pans and chill in refrigerator.
  • Cut into squares before firm.
  • This recipe makes about 5 lbs of fudge.
