SWEET POTATO, CARROT AND DRIED FRUIT CASSEROLE



Sweet Potato, Carrot and Dried Fruit Casserole image

This dish is inspired by several tsimmes recipes in Joan Nathan's "Jewish Cooking in America." Tsimmes, a Yiddish word that means "fuss," doesn't have to be fussy at all. Sometimes the dish contains meat (and is fussier than this one), but sometimes it's just fruit and vegetables. Warning: You may find yourself eating this for breakfast.

Number Of Ingredients 11

6 medium carrots about 1 1/2 pounds, peeled and cut in 3/4-inch dice
3 medium sweet potatoes about 2 1/4 pounds, peeled and cut in 3/4-inch dice
2 Granny Smith apples, peeled, cored and cut in medium dice
1/4 pound pitted prunes, cut in half
1/4 pound pitted apricots, quartered
2 tablespoons mild honey, like clover
1/2 teaspoon freshly grated nutmeg
1 teaspoon ground cinnamon
Salt to taste about 1/2 teaspoon
1 cup fresh orange juice
1 tablespoon unsalted butter

Steps:

  • Preheat the oven to 375 degrees. Butter or oil a 3-quart baking dish.
  • Place the carrots and sweet potatoes in a steamer set above 1 inch of boiling water, and steam for five to 10 minutes, until just tender. Drain and toss with the remaining ingredients in a large bowl. Combine well, and scrape into the prepared baking dish. Place in the oven, and bake 40 to 50 minutes, stirring every 15 minutes, until the sweet potatoes and carrots are thoroughly tender. Dot the top with butter, and bake another 10 minutes until the top is lightly browned. Remove from the heat, and serve hot or warm.

Glazed Chicken with Fruit and Sweet Potatoes image

1 3/4 cups Swanson Chicken Stock
1 package (6 ounces) dried fruit bits or morsels*
1/4 cup packed brown sugar
1/4 teaspoon garlic powder
1/4 teaspoon dried rosemary leaves, crushed
4 bone-in chicken breast halves
1 large sweet potato, cut into 1-inch pieces
1 medium onion, cut into wedges

Steps:

  • Heat 1 cup stock, fruit, brown sugar, garlic powder and rosemary in a 2-quart saucepan over medium heat to a boil.
  • Place the chicken, potato and onion into a roasting pan. Pour the stock mixture over all. Cover the pan.
  • Bake at 450 degrees F for 15 minutes. Pour the remaining stock into the pan. Bake, uncovered, for 15 minutes or until the chicken is cooked through and the vegetables are tender.
  • *Use dark and golden raisins, apricots and apples.

Very flavorful side dish, Do Not canned sweet potatoes, they will burn. This is for fresh sweet potatoes.

6 medium sweet potatoes or 6 medium yams
1 1/2 cups applesauce
2/3 cup brown sugar
3 tablespoons butter, melted
chopped nuts (optional)

Steps:

  • Peel sweet potatoes if you wish, and cut into cubes, or slices.
  • In a bowl, mix together applesauce, brown sugar, butter, and cinnamon, and spoon this mixture over potatoes.
  • Cover, and cook on low 6-8 hours in a slow cooker or until potatoes are tender.
  • Mash potatoes and sauce together if you wish with a large spoon, or spoon potatoes into serving dish and top with the sauce.
  • Sprinkle with nuts if you wish.

I have a favorite way to make sweet potatoes. They are the type swimming in a concoction of butter, brown sugar and marshmallows until the syrup is thick and sticky. Loaded with fat and calories, they are reserved for the holidays (when we tend to throw caution to the wind regarding our waistlines!). I found this recipe in a Slow Cooker cookbook and decided to give it a try. These are rich and sweet, with far less fat and sugar than I would normally add which equates to being able to eat more of them. :-) They smell and taste SO good! NOTE: I used my smaller 4 quart cooker

2 pound(s) (about 6 medium) sweet potatoes
1 1/2 cup(s) applesauce
2/3 cup(s) brown sugar (i prefer dark)
1/4 cup(s) melted butter
1 teaspoon(s) cinnamon

Steps:

  • Peel sweet potatoes if you wish (I did!). Cut into cubes. In the photo, mine are about 1 inch.
  • In a bowl, mix together applesauce, brown sugar, butter and cinnamon. Spoon over potatoes.
  • Cover and cook on low for 6-8 hours, or until potatoes are tender. (see note!)
  • Serve with sauce poured over potatoes. You may also top with chopped nuts. I didn't do this, but if I were going to I'd probably used toasted pecans.
