It's just to yummy! Great this time of the year. You can pakage all the spices in a pretty bag or glass jar enclosed with directions. And give away! The picture displays not only the tea but the spices that make it.

1 tablespoon fennel seed
1 tablespoon cardamom seed
6 cloves
6 peppercorns
1 tablespoon cut dried licorice root
1 1/4 inches gingerroot
1 cinnamon stick
2 star anise
7 cups mineral water
2 tablespoons tea (Green, black, jasmine, whatever you please)
4 tablespoons brown sugar or 4 tablespoons honey
2 cups milk or 2 cups cream

Steps:

  • Bring to a boil spices in water, then simmer 20 minutes.
  • Add tea for 5 minutes no longer it will be to bitter!
  • Strain.
  • Add sugar and milk stir to dissolve.
  • Drink Up!
  • Or cool and add ice for a refreshing summer drink.

Kicked up with golden rum, this sweet tea is an interesting take on a longtime Southern classic. This recipe is from"Emeril at the Grill" by Emeril Lagasse.

7 cups water
6 orange pekoe tea bags
1 1/2 cups sugar
1 1/3 cups freshly squeezed lemon juice
1 cup Bacardi 151 or other high-proof golden rum
Fresh mint sprigs, for garnish

Steps:

  • Bring 4 cups of the water to a boil in a medium saucepan and add the tea bags. Remove the pan from the heat, cover it, and allow the tea bags to steep for5 minutes.
  • Remove and discard the tea bags. Add the sugar to the saucepan and stir until dissolved. Add the remaining 3 cups water and stir to combine. Transfer the mixture to a pitcher, and add the lemon juice and rum. Chill thoroughly before serving.
  • Serve over ice, in tall glasses garnished with mint sprigs.

A really fruity & spicy bread pudding which has a drop of brandy in it too! There are quite a few bread pudding recipes around, but this is the one I always make - it was my grandmother's recipe and I remember eating this at her house when I was little! I added the brandy one Christmas when I made this as a last minute Christmas-type pudding! You don't have to add the brandy - just add the fruit with the other ingredients, after the bread has been soaked in milk. Serve warm as a dessert with cream, ice-cream or custard. You used to be able to buy these in a local bakery where my grandmother lived - they were sold cold, I always prefer mine warm, but it's up to you!

8 ounces sliced white bread, crusts removed or 8 -12 slices white bread, depending on the thickness
2 -3 teaspoons mixed spice
6 ounces raisins (all mixed together) or 6 ounces currants (all mixed together)
4 ounces candied peel
10 fluid ounces milk
4 tablespoons brandy
3 ounces butter
4 ounces soft brown sugar
2 eggs, beaten
1 orange, zest of, grated
1 lemon, zest of, grated
1 tablespoon demerara sugar
grated nutmeg

Steps:

  • First marinate the fruit & peel in the brandy - set aside.
  • Tear the bread into even sized pieces and soak in the milk for about 30 minutes.
  • Pre-heat oven to 180C/350F/Gas 4.
  • Melt the butter in the microwave or a small saucepan.
  • In a large roomy bowl, mix the sugar, beaten eggs, melted butter, spices, orange & lemon zest together, then add the brandy-soaked fruits & mix well again.
  • Tip it all into the milk soaked bread.
  • Mix it all together - and then pour into a well buttered baking dish.
  • Sprinkle demerara sugar on top & add some grated nutmeg if you wish.
  • Bake for 1 hour, or until the bread pudding is well puffed up, crispy and golden brown. It will sink on cooling, but that's fine!
  • Cut into squares - serve warm with cream, ice-cream or custard.
  • As a final flourish - you can also grate some orange zest over the cream etc!
  • N.B. You can also make this with Brioche or any type of Bread product, as long as it it not too savoury.

2 1/2 c apricot nectar
1 c orange juice, fresh
1/2 c pineapple juice
1/2 c water
2 Tbsp brown sugar, brown (or to taste)
1 tsp ground cinnamon
4 whole cloves
4 lemon slices
2 1/2 tsp instant tea powder, lemon
2 oz white rum
4 cinnamon sticks (for garnish)

Steps:

  • 1. In a medium size pot, combine the apricot nectar, orange & pineapple juices, water, sugar, ground cinnamon, cloves and lemon slices.
  • 2. Bring to a boil and reduce the heat to low.
  • 3. Cover and simmer for 10 minutes.
  • 4. Next stir in the rum and simmer for another 5 minutes.
  • 5. Now add the instant tea, mixing well.
  • 6. Strain the tea mixture and pour into warm mugs.
  • 7. Garnish with the cinnamon stick, for stirring.
  • 8. This is best when served hot.
