4 c chicken breast or boneless, skinned chicken, cubed, or rotisserie chicken , skinned and boned and cut up.
4 oz creamed cheese, softened
1/3 - 1/2 c mayonaise, start with less & add more if needed
1/3 c vidallia or maui salad dressing
1/2 tsp seasoned salt
1/4 tsp freshly ground pepper
1/2 c green onions or sweet red onion, chopped
1 c seedless red or green grapes, halved
1 c celery, diced
1 c peeled and diced apple or pineapple tidbits (your choice) either is equally good
1/2 c water chestnuts, chopped
1/2 c walnuts or sliced almonds, toasted

Steps:

  • 1. In a large bowl, whisk together softened creamed cheese, salad dressing, & mayonaise until creamy and smooth. Add the S S & P. Prepare all veggies & fruit and fold into creamy mixture. Lastly, fold in the prepared chicken. You can roast a whole one or bake chicken breasts yourself or use a deli chicken, skinned, boned and cut in cubes. When salad is all mixed refrigerate for several hours so flavors will marry.

½ cup creamy salad dressing (such as Miracle Whip®)
2 tablespoons white sugar, or to taste
¼ cup raisins
1 ripe mango, peeled and diced

  • Put the chicken in a large pot with enough water to cover. Bring to a boil; reduce heat to medium. Allow the chicken to simmer until no longer pink at the bone and the juices run clear, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chicken to a cutting board. Use a pair of forks to remove and shred the meat from the chicken. Discard the remains.
