FRUITY CHICKEN SALAD WITH TARRAGON
Chicken salad often finds its way to my summer menus, served on greens or a croissant. I think this one is just a little special. It's sweet and juicy from the apples and grapes, a little savory from the tarragon, crunchy from the pecans and celery, and lightened up a bit with some yogurt.

FRUITY & CREAMY CHICKEN SALAD
I love chicken salad and was playin' in the kitchen one day and created this recipe. I was low on mayo so I extended it with creamed cheese. Yummy! I think I now know how those deli chicken salads taste so creamy & rich. The addition of grapes and apple, or pineapple send it over the top in goodness. I learned the hard way not...

Steps:
- 1. In a large bowl, whisk together softened creamed cheese, salad dressing, & mayonaise until creamy and smooth. Add the S S & P. Prepare all veggies & fruit and fold into creamy mixture. Lastly, fold in the prepared chicken. You can roast a whole one or bake chicken breasts yourself or use a deli chicken, skinned, boned and cut in cubes. When salad is all mixed refrigerate for several hours so flavors will marry.
- 2. Make this salad your own by adding different fruits other than what I used. This is great served on lettuce leaves, a half an avacado, or just by itself. Enjoy!
FRUITY CHICKEN SALAD
Steps:
- Clean and cut up lettuce into large bowl. Cut up chicken breasts into 1-2" pieces and fry in olive oil. When chicken starts turning white, generously baste with raspberry chipotle salsa. Continue basting and frying until chicken is done. Add corn, tomatoes, avocado, and oranges to lettuce and toss. Top off salad mixture with chicken and crumbled bacon. Serve and dress with seasame dressing.
Tips:
- Use a variety of colors and textures in your salad. This will make it more visually appealing and interesting to eat.
- Don't be afraid to experiment with different fruits. Some fruits that work well in chicken salad include grapes, apples, oranges, and pineapple.
- Be sure to season your salad to taste. A simple dressing of mayonnaise, salt, and pepper is a good starting point, but you can also add other seasonings, such as herbs, spices, or honey.
- Make sure your chicken is cooked properly. Chicken that is undercooked or overcooked will not be as tender or flavorful in your salad.
- Let your salad chill for at least 30 minutes before serving. This will allow the flavors to meld together and the salad to become more firm.
Conclusion:
Fruity chicken salad is a delicious and refreshing dish that is perfect for a summer meal. It is easy to make and can be tailored to your own taste preferences. Whether you like your salad sweet, savory, or somewhere in between, there is a fruity chicken salad recipe out there for you. So next time you are looking for a quick and easy meal, give fruity chicken salad a try. You won't be disappointed!
