Fruited Caesar Salad image

"I couldn't find a single Caesar salad recipe I liked, so I combined ingredients from a few recipes and came up with this one," shares Kathy Keleher of Oak Creek, Wisconsin. "The addition of fruit gives this salad such a wonderful flavor. You could use a mango or mixed dried fruit instead of an apple or a pear."

Time 15m

Yield 4 to 6 servings

Number Of Ingredients 10

1 clove garlic, smashed with a pinch of salt and a little olive oil
4 anchovy fillets
2 egg yolks
1 tablespoon Dijon mustard
2 lemons, juiced
2 tablespoons water
1/2 cup extra-virgin olive oil
1/4 cup freshly grated Parmesan, plus extra for garnish
Freshly ground black pepper
2 heads romaine lettuce

Steps:

  • Make the dressing: Smear the garlic paste over the inside of the salad bowl. Put the anchovies, egg yolks, mustard, lemon juice, and water into a blender and process for 30 seconds until the mixture is smooth. With the blender running, pour the olive oil in slowly for the dressing to emulsify. Stir in the Parmesan, a pinch of salt and a couple of grinds of black pepper; set aside. (Refrigerate the dressing if you will not be using it right away.)
  • Assemble the salad: Tear the lettuce into a large bowl. Add enough dressing to coat the salad to your liking. Add some extra Parmesan and toss the salad well. Serve immediately.

Tips:

  • Prep your ingredients: Wash and dry your lettuce, chop your croutons, and cook your bacon ahead of time to save time.
  • Use a good quality dressing: A homemade dressing will always taste better than a store-bought one. Use fresh ingredients and whisk until well combined.
  • Don't overcrowd the pan: When cooking your bacon, don't overcrowd the pan. This will prevent the bacon from cooking evenly and becoming crispy.
  • Serve immediately: Caesar salad is best served immediately after it is made. The dressing will start to wilt the lettuce if it sits for too long.

Conclusion:

Caesar salad is a classic dish that is perfect for any occasion. It's easy to make, delicious, and can be customized to your liking. Whether you like it with chicken, shrimp, or tofu, there's a Caesar salad recipe out there for everyone. So next time you're looking for a quick and easy meal, give one of these recipes a try.
