2 8-ounce packages cream cheese, softened to room temperature
2 tablespoons orange juice
1 3.4 ounce package instant French Vanilla pudding mix
1 14.5 ounce can fruit cocktail, thoroughly drained
1½ cups slivered almonds
Your choice of crackers, for serving

Steps:

  • With a mixer, combine cream cheese, orange juice and pudding mix until well blended. Gently stir in drained fruit cocktail.
  • Shape into two small or one large ball. Wrap the ball(s) in plastic wrap and place into a rounded bowl similar in size to the shape of your ball. Chill for several hours until firm.
  • When ready to serve, place the almonds in a shallow bowl and carefully roll the fruit and cheese ball in the nuts to evenly coat. Place the ball on a serving platter, sprinkling more of the nuts as needed to coat the fruit and cheese.
  • Serve with crackers.

4 ounces blue cheese, crumbled (2/3 cup)
1 container (8 ounces) sharp Cheddar cold-pack cheese food
2 packages (3 ounces each) cream cheese, softened
1 teaspoon Worcestershire sauce
Paprika
1/3 cup grated Parmesan cheese
4 drops yellow food color, if desired
1 stick cinnamon
Lemon leaf
Vegetable oil
Brown paper
Crackers, if desired

Steps:

  • Mix blue cheese, cheese spread, cream cheese and Worcestershire sauce in medium bowl with fork until blended. Cover and refrigerate at least 8 hours until chilled.
  • Divide cheese mixture in half. Shape 1 half into a ball on waxed paper. Sprinkle another piece of waxed paper with paprika. Roll cheese ball in paprika, coating completely. Mold into apple shape.
  • Shape other half of cheese mixture into a ball on waxed paper. Shake Parmesan cheese and food color in covered container until cheese is evenly colored. Sprinkle another piece of waxed paper with cheese. Roll cheese ball in Parmesan cheese, coating completely. Mold into pear shape.
  • Make small depression in apple and pear for stem ends. Cut 2 small pieces from cinnamon stick. Insert cinnamon stick pieces for apple and pear stems. Insert lemon leaf in apple. Brush oil over small piece of brown paper; cut into leaf shape. Insert leaf in pear. Serve with crackers.

4 cups shredded Cheddar cheese (16 ounces)
2 tablespoons basil pesto
1 tablespoon grated onion
1/4 teaspoon yellow mustard
Red pepper sauce
1/4 cup finely chopped parsley or cilantro
1/4 cup pine nuts or sliced almonds
2 tablespoons chopped red bell pepper
Piece of lemon peel, if desired
Assorted crackers, if desired

Steps:

  • Stir together cream cheese and Cheddar cheese; divide in half. Stir pesto into 1 half; stir onion, mustard and 2 or 3 drops pepper sauce into other half. Cover each half; refrigerate about 4 hours or until firm enough to shape.
