Time 25m

Number Of Ingredients 14

1 pound fresh strawberries (sliced and halved (about 3 cups))
1 pound diced fresh pineapple (about 3 cups)
1 pint fresh blueberries (about 2 cups)
5 kiwi fruit (peeled and cut into bite-sized pieces (about 2 cups))
2 cups seedless red grapes
1 large banana* (peeled and cut into bite sized pieces (about 1 cup))
Chopped fresh mint (optional)
zest of 1/2 medium orange
juice of 1/2 the same medium orange (about 3 tablespoons)
zest of 1 small lime (or 1/2 small lemon)
juice of the same 1 small lime (or 1/2 small lemon)
3 tablespoons honey
1 teaspoon pure vanilla extract
1 tablespoon poppy seeds

Steps:

  • If you will not be serving the fruit salad right away, place all of the fruit except the banana in a large serving bowl: strawberries, pineapple, blueberries, kiwi, and grapes.
  • In a small bowl or large measuring cup, whisk together the dressing: orange zest and juice, lemon zest and juice, honey, vanilla extract, and poppy seeds.
  • Pour the dressing over the fruit and with a large spoon, toss gently to combine. Cover and refrigerate for at least 30 minutes to allow the juices to marry (1 hour is even better). Just before serving, stir in the banana. Sprinkle with fresh mint. Enjoy!

TEQUILA LIME SYRUP FOR FRUIT SALAD

Tequila Lime Syrup for Fruit Salad image

This is lovely syrup used to brighten up the flavors of a simple fruit salad. The recipe comes to me from the Santa Fe Cooking School and works especially well as a light dessert after a Southwestern meal. The flavors are reminiscent of the popular mojito. I like it best with more tropical fruits like pineapple, mango and banana but find it works very well with summer fruits such as strawberries and grapes. One batch of syrup is plenty for 4-6 cups of fruit. You can prepare this days ahead of time and mix with the salad just before serving.

Number Of Ingredients 5

1 cup sugar
2 cups water
1 bunch of fresh mint
1 lime, juice of
3 tablespoons tequila

Steps:

  • Carefully wash the mint leaves removing any bruised leaves or stems.
  • Place sugar, water and mint leaves in a medium saucepan and bring to a boil over medium heat. Lower the heat and continue to simmer 15 minutes, occasionally scraping down sides to make certain all sugar crystals are incorporated.
  • Add the tequila and continue to simmer an additional 5 minutes.
  • Turn off heat and add the juice of one lime. Let syrup cool to room temperature.
  • Strain out the mint and refrigerate the syrup until ready to toss with your fruit salad.

Tips:

  • Choose ripe, fresh fruit. This will ensure that your fruit salad is flavorful and juicy. Avoid using fruit that is bruised or overripe.
  • Use a variety of fruits. This will add color, texture, and flavor to your fruit salad. Some good choices include berries, melon, citrus fruits, and tropical fruits.
  • Cut the fruit into small pieces. This will make it easier to eat and will also help the fruit salad to absorb the lime syrup.
  • Make the lime syrup ahead of time. This will give the flavors time to meld and will also make it easier to assemble the fruit salad.
  • Chill the fruit salad before serving. This will help to keep it fresh and refreshing.

Conclusion:

Fruit salad is a delicious and healthy way to enjoy fresh fruit. With its vibrant colors and refreshing flavor, it's the perfect dish for any occasion.
